The first stop on Sophia's Culinary Tour of America is a tour of the Southwest on January 21st & 22nd!
Attend 8 of the 12 culinary tour dinners and be entered in a drawing to win a week long trip for two to California Wine Country! This trip includes accommodations in a luxurious bed and breakfast and a personalized wine tour.

The Top 10 Food Trends for 2011 according to the National Restaurant Association Chef's Survey are:

Chef Gary's Secrets he is willing to share:
- Before cooking seafood, get all the moisture off by patting down with paper towel.
- Use xanthum gum for health conscious alternative to butter and cream.
- Use boiled beets to color sauces and pickles
- Make a roux for gumbo by baking at 400 degrees instead of the stove top method.
- Ripen tomatoes on an open rack, not in the refrigerator
- Freeze bananas when they start to turn and defrost when readyt for use for banana puree or banana bread

Sophia's Kitchen Corner
Banana Nut Bread 1/2 cup Crisco shortening 1 cup sugar 2 cups all-purpose flour 1 teaspoon salt 2 teaspoons baking powder 1/2 teaspoon baking soda 2 eggs, beaten 3 bananas, mashed 1/3 cup buttermilk 1/2 cup chopped walnuts or pecans Preheat oven to 350 degrees. Cream shortening and sugar. Sift together flour, salt, baking powder, and baking soda and add to creamed mixture. Add remaining ingredients; mix well. Pour into a well-greased loaf pan. Bake for 40 to 45 minutes.

Researchers hope to apply these results, if corroborated by further studies, to the management of inflammatory and autoimmune conditions.

Emelie HebertnomiSpa Massage Therapist Emelie has been a massage therapist for 6 years. She loves everything about massage! But, mostly she loves making people feel better and less stressed. She really believes in the positive benefits of massage on the overall well being of a person. She says when it comes to massage many people sometimes shy away because they have received a massage in the past that left them in pain afterward. Emelie wants her clients and potential clients to know that "a deep tissue massage doesn't have to hurt, as long as the client communicates massage will only benefit the recipient." Some specialty massages that Emelie does for clients include: Reiki, Myofascial Release, Thai Yoga Massage, and much much more.
