Gary Hawkins Sophia's Restaurant, Executive Chef Chef Gary Hawkins took a brief hiatus from the Fairview Inn and Sophia's Restaurant when he opened the Parlor Market Restaurant in downtown Jackson. He rejoined the Fairview team in November rejuvinated and with many fresh new ideas to enhance Sophia's and the Fairview's menus.
Chef Gary describes his cuisine as Southern regional cuisine with a healthful flair.
Originally from Michigan, Chef Gary graduated from the Memphis Culinary Academy among the top of his class in 1993. He spent the next thirteen years learning and perfecting his craft at some of Memphis' favorite restaurants, Paulette's, Marena's, McEwen's and Lolo's Table, which was voted Best New Restaurant for 2005. Sophia's Restaurant was voted among the Best New Restaurants in Jackson in 2006 as well as winning an Award for Best Presentation and Originality from the Chef's of MS Awards Gala in 2007.
Chef Gary continues to receive accolades from all around Jackson.
When not working at Sophia's, Chef Gary enjoys spending time with his wife, daughter, and their two cats.
We are very privileged and excited to have Chef Gary Hawkins as a part of our team and encourage you to come and try some of his new menu items and the introduction of his delicious new menus in the coming year. In addition Chef Gary challenges professional and amateur Chef's alike to his Culinary Throwdown beginning in January.

Peanut Ripple Divinity 3 Cups Sugar 1/2 Cup Water 1/2 Cup Light Corn Syrup 2 egg whites 1 teaspoon vanilla extract 1/2 cup peanut butter chips 1/2 cup roasted peanuts, chopped
Combine sugar, water, and syrup in a 3-quart saucepan; cook over low heat, stirring constantly, until sugar dissolves. Cook over high heat, without stirring, until mixture reaches hard ball stage (260 degrees). Beat egg whites (at room temperature) in a large mixing bowl until stiff peaks form. Pour hot sugar mixture in a very thin stream over egg whites while beating at high speed of an electric mixer. Add vanilla, and continue beating until mixture holds its shape (5 to 7 minutes). Stir in the remaining ingredients. Drop by teaspoonfuls onto waxed paper; let stand until firm. Yield: About 3.5 dozen.

The Eagle Fund benefits the Blair E. Baton Children's Hospital and the Boy Scouts of America- Andrew Jackson Council. Sophia's Culinary Throwdown
With Chef Gary Hawkins
Beginning in January, Sophia's will feature a monthly culinary throwdown. Watch as amateur and professional chefs challenge Sophia's Restaurant Executive Chef, Gary Hawkins in a monthly Culinary Throwdown of a featured dish. Watch the competitor's make their special recipe, learn their secrets and enjoy a special lunch.
Each month, Chef Gary Hawkins will take on (3) different challengers in this fun culinary event. The audience will be encouraged to interact with the Chefs, ask questions, and taste the dishes and enjoy a fabulous lunch. January's throwdown menu item features "Shrimp 'n Grits."
