Eagle Fund-
Friday, November 19:
 This fall the Fairview will host the third annual Eagle Fund event to raise money for the Boy Scouts of America and Blair E. Batson Children's Hospital. This spectacular event will include a reception, silent and live auction, and seated dinner to raise money for these charities. More details are coming soon on the theme of this year's event.
 The Simon Sharp Eagle Fund was created in memory of Simon Sharp, son of Peter and Tamar Sharp and twin brother of Sophie.

Sophia's Kitchen Corner
 
scallops
Pan Seared Maine Scallops with Sweet Corn Etouffee
-
 4 U-10 Scallops, side muscle removed
With your saute pan at very high heat, add 1T olive oil. It should start to smoke, add your scallops and sear. Do not move or play with the scallops, let them caramelize, you may need to lower your heat slightly after 3 minutes, flip the scallops over and cook 1 minute more.
 

Sweet Corn Etouffee
 1/4 butter, 1/4 flour
 1 Green bell pepper, diced
1 tomato, coarsely chopped
2t Garlic, minced
2t Creole seasoning
2C Yellow Corn, shucked and cleaned
1 bay leaf
1t Thyme, whole, dried
1t Oregano, dried
Hot sauce to taste
3C chicken stock
Melt butter over medium heat in a 4 quart pan Add onion, bell pepper, corn, garlic and creole seasoning. Saute 3-5 minutes. Add the flour and make a roux, stirring for another 3-5 minutes. Add your stock and remaining ingredients and bring to a boil. Reduce heat to a low simmer for 10-15 mins check for salt and pepper.

With the start of August comes busy schedules for families with kids going back to school. Take the time to still unwind on the weekends and enjoy some of the fun family activities that are planned for the month of August (take a look at Upcoming Events). Take comfort, though, in knowing that even though life may be back to a hectic schedule, the start of August also means Fall is right around the corner and with Fall comes the start of football season, fall parties, and cooler weather!

As you may have heard, recently the Jackson City Council voted to adopt new zoning for Bed & Breakfasts in Jackson. Under this zoning, we may now apply for a new use permit to allow Sophia's Restaurant to operate. We appreciate all of the support from the community and the kind words that we have been hearing from all of our patrons. Sophia's will continue to remain open for business. We welcome you to dine with us for lunch or dinner or Sunday brunch and taste some of the Chef Jason's delicious creations. Again, we thank you for all of your continued support and well wishes. All of the long hours and effort we put into creating a special experience for our guests is validated by your expressions of appreciation for what the Fairview provides for the community.

Many who have dined at Sophia's have most likely had the pleasant experience of meeting Cathy Baker. Cathy has been working in Sophia's as a server since the restaurant opened. She works mostly during lunch time, though, you may catch her in the evening during our monthly culinary tours. Cathy is a favorite among Sophia's guests due to her wit and undeniable charm- many guests even request Cathy because they know they will receive fantastic, reliable service. She has extensive restaurant experience and really enjoys working in an environment which allows her to build a personal relationship with her customers.
Recently, Cathy was awarded as a Hometown Hero for the city of Jackson for her dedication and outstanding attitude. Only a select few are awarded this honor each year and Sophia's Restaurant is proud to have such an outstanding employee.
When not working at Sophia's, Cathy enjoys spending time with her yellow Labrador, Bud, and Cat, Diva. She also enjoys painting when she has free time.
