SOPHIA'S KITCHEN CORNER
 
artichoke flan
Artichoke Flan
 
 1Lb Artichokes, canned and drained
3 eggs beaten
1T parsley
1T flour
1/4C Parmesan cheese
 1 1/2C heavy cream
2t garlic
 2t shallots (minced)
 1T lemon juice
 salt and pepper to taste
Puree artichoke hearts in processor. Place puree into mixing bowl and add the remaining ingredients and mix well. Bake in buttered ramekins at 325 degrees for 30 minutes till set. A nice side dish with fish or a first course.

 The start of May means wedding season is here! The perfect room for honeymooners, or those looking for a romantic anniversary spot, is the Hayloft Suite. This suite boasts a luxurious King bed and a large comfortable sitting area. This room also has a deluxe bathroom that offers guests a large, double Jacuzzi and a separate walk-in shower. While on your romantic stay in this honeymoon suite be sure to book a time to unwind together in nomiSpa with a relaxing couples massage. The rate for this room is 249.00 for single occupancy, 264 for double occupancy, which includes a full southern breakfast.

 Wedding activities have been abuzz at the Fairview. We have several elegant rooms available for the bridal shower, brunch, or luncheon you may want to plan. The most popular room for bridal get-togethers is the Roses Room and Foyer. This room is perfect for an intimate bridal function and your guests will love the elegant decor. Not only are Saturday bridal functions very popular, Sunday has also become a favorite for brides to have their shower, luncheon, or brunch. Also, take advantage of this beautiful weather and schedule an outdoor bridal event! Our culinary team will prepare a five course set menu, accompanied with or without wines, each month from a particular country. Each month we will have entertainment and decor to fit the theme of each featured country.

Kathy Trichell, Massage Therapist,Esthetician, Nail Tech
               Originally from Bastrop, LA, Kathy's career path to being a Massage Therapist is quite an interesting story. The story begins with Kathy relocating to Dallas, TX.  When she moved there she was able to get a job at a country club. One evening, the entertainer for the country club had a terrible migraine. Kathy told the entertainer that she thought she might be able to help her get rid of her migraine by giving her a head massage. The entertainer's migraine quickly subsided after receiving the head massage and she soon told everyone in the country club of the relaxing treatment that Kathy had given her. The entertainer then took Kathy out to dinner to thank her but really took her to a massage therapy school where Kathy could become a licensed massage therapist. Kathy received her license in 1986 and obtained a position with Signature Athletic Club in Dallas, TX. It was at Signature Athletic Club that Kathy was privileged to perform massage therapy work for the Dallas Cowboys. She holds a license for massage therapy in MS, LA, and TX.
               In 2002, Kathy went to esthetic school and received her license and through Signature Athletic Club met a doctor who wanted Kathy to work with his plastic surgery patients, teaching them how to properly take care of their skin and apply makeup. In 2008, Kathy moved to Mississippi and started at the Fairview Inn in October of 2009. This past year she received her license to become a Nail Tech.  
               In her spare time, Kathy loves spending time with her family; she has one son and three grandchildren in Baton Rouge, LA. She also enjoys going to flea markets, collecting antiques and refinishing them, collecting stained glass, doing cross-stitch and needle point, and building things (with power tools).
               Kathy's favorite part about being a Massage Therapist is seeing her clients leave feeling relaxed and relieved of stress after receiving a therapeutic massage treatment.
COMMUNITY CORNER
 
wineSante South Wine Festival
The Sante South Wine Festival was held April 24, 2010, at The Gardens at Jackson Place.This event benefitted the Alzheimer's Association- Mississippi Chapter. In addition to sampling exquisite food and beverages, guests enjoyed the live music and the items up for silent auction. The event was a huge success and everyone loved the dish served up by Sophia's Restaurant Chef, Gary Hawkins, Moroccan Barbecue Quail with an Asian Slaw.
