From Sophia's Kitchen
 
 
 
 Flourless Chocolate Cake
  • 8 oz. Chocolate
  • 8 oz. Butter
  • 1.5 cups Sugar
  • 6 Eggs
  • 1 cup Cocoa Powder

Melt chocolate and butter slowly over double boiler.  Blend in sugar then eggs one at a time stirring well after each.  Sift cocoa powder, which till just set.

 
Bake 350 degrees for 30-40 minutes in spring form pan with buttered parchment.

 Having just returned from Atlanta after attending our annual Professional Association of Innkeeper's Conference, our heads are spinning with all that we learned. Just as your businesses are moving at the speed of light, the same is true for those of us in the hospitality industry. Yet with all that is changing in our world, it's refreshing to know that our Inn's provide a respite from the stress of the day-to-day mayhem. Our guests can unwind and be pampered - in Sophia's Restaurant, nomiSpa or reading a book on the porch in a rocking chair. They can have genial conversations with other Inn guests or ourselves, or just enjoy each other's company. After all, Inns are more than a place to stay, they are a place to experience and create memories.

The Fairview Inn is the host for many fundraisers throughout the year, giving back to organizations who do so much to help others.

The Fairview Inn was the host of the 1st annual Chef's and the City event this past October benefiting the Simon Sharp Eagle Fund.  Simon Sharp, the son of Peter & Tamar Sharp, was an Eagle Scout & Leukemia patient at the Blair E. Batson Hospital.  Monies raised for the Simon Sharp Eagle Fund will benefit these two charities.

Mark your calendars for Friday, November 20th, 2009 for this years "Chef's and the City" event.

Wedding Season has begun at the Fairview Inn!
 
WeddingsWeddings are a tradition here at the Fairview Inn. We are the perfect venue for the couple looking for a traditional and southern chic affair. Most everyone has been to a wedding and reception at the Fairview.  Our combined charm, elegance and romance make the Fairview Inn the perfect place for a most memorable day.  

Whether it is a wedding reception, rehearsal dinner, Bridal Showers or other special event, our hospitable staff can handle every detail. Upon booking a wedding at the Fairview Inn, our staff can help you create a unique experience for your guests and provide assistance with other vendors to make your day special.
 
From March until August, the Fairview Inn is full of everything WEDDING! Saturdays are not the only days for weddings anymore.  Friday and Sunday weddings are just as popular.  The Fairview Inn can accommodate traditional weddings, contemporary weddings, intimate weddings, Jewish weddings, Indian weddings and more! Indoor and outside ceremonies are available for intimate groups of 20 or elaborate gatherings up to 650.

This month's featured staff member is a 9 year old four legged furry bundle of loving energy. Fluff, a Chinese Crested Powder Puff just loves working in the front office with the girls. She knows each Fairview Inn staff member and howls with joy upon greeting them. Most of you are probably familiar with the Chinese Crested breed, Fluff's hairless counterpart. They are bare all over except on their head/feet and ears. Fluff, a Powder Puff, is the same breed but has a white curly coat and weighs about 13-15 lbs, depending on how much she is snacking.
Her hobbies: napping, playing fetch and eating. (it's a dogs life!)

 
Sophia's Restaurant at
the Taste of Mississippi
 
A much-anticipated event in the Jackson area, Stewpot's Taste of Mississippi: Homegrown Hunger Relief offers culinary delights from more than 45 area restaurants, a live and silent auction, and live music by Pryor and the Tombstones and Vicksburg musician Ralph Miller. Every year, the event is held at Highland Village, a premier outdoor shopping center in Jackson. All proceeds from Taste of Mississippi will benefit Stewpot Community Services, whose mission is to provide for the needs of the poor, elderly, and disabled in Jackson's metro area. In 2008, the event raised more than $112,000 for Stewpot's 17 ministries. 
 
Sophia's Chef, Gary Hawkins prepared Asian boneless short ribs with a jasmine rice.  They were a favorite among guests and we hope to add them to the menu soon!
