Creamy Tomato Dill Soup

2 Tablespoons Olive Oil

2 Celery, stalks. Diced.

1 Carrot, Small. Diced.

1 Onion, Medium. Diced.

1 Tablespoons Garlic, minced.

Salt & Pepper
-
2 teaspoons Oregano
-
2 teaspoons Thyme
-
1 Tablespoon Dill
-
1/4 Cup White Wine
-
8 Cups Toamtoes, whole. Canned, rough chopped.

2 Cups Chicken Stock
-
1 Cup Heavy Cream
-
Parmesan Cheese
Heat olive oil in 12 quart pot. Add onion, celery, salt and pepper to taste, saute 3-4 minutes more. Add herbs, stir well, add white wine, cook for 3 minutes. Add tomatoes and stock, bring to a simmer cook until vegetables are tender. Add cream if desired. Garnish with Parmesan cheese.

Message from the Innkeepers
Welcome to our first issue of our monthly newsletter for the Fairview Inn. In this and future issues, we will strive to keep you informed as to activities, events, special offers and interesting stories involving the Inn.
Over the past eighteen months, we have undergone over a half million dollars in renovations. We have added Sophia's Restaurant for Lunch, Dinner and Sunday Brunch. We have built nomiSpa, a day Spa offering massage, facials, manicures and pedicures for relaxation and rejuvenation. We have expanded our facilities for corporate events, fundraisers, wedding ceremonies and receptions, afternoon teas, rehearsal dinners, family retreats and social gatherings. We have also remodeled and refurbished several guests rooms and suites. In addition we have added a game room, a guest pantry with complimentary food items and honor bar, a guest lounge and provide complimentary WI-FI throughout the Inn. The Inn has evolved from a bed & breakfast to a small luxury hotel. Our commitment is to provide a quality guest experience for lodging, dining, spa services and events. Our friendly and flexible staff offer personalized service to create a truly memorable Inn experience.

High Tea Fundraiser Steeped in Pleasure

What lovely associations float to the surface when I hear the words "high tea." They're practically as much a tonic as hot tea itself, with memories of the Ritz-Carlton in Orlando, Fla., with a girlfriend (on the high end) or a quaint little shop in Stratford-upon-Avon with my thoughts and my postcards (on the other end). Fine china, sweet buttery things and a long, pleasant pause in the afternoon - that's what steeps with me. Fairview Inn proprietor Peter Sharp pegged it right: It's just so civilized.
As a respite, it's delicious. As refreshment, it's delicious. Wouldn't you know it? Now I've got scones on the brain. On Saturday, High Tea attendees will have scones on the plate. Warm ones. Mmmm. Saturday afternoon, the Fairview Inn is the site for a High Tea fundraiser for the Mustard Seed Auxiliary, support arm for the Christian community for mentally challenged adults. Ceramics and paintings in the Mustard Seed Ceramics Art Shop, works by local artists in a silent auction and entertainment by the Bells of Faith, Mustard Seed's hand bell choir, are part of the event. Tea, too, of course. The fundraiser's $50 for ages 13 and older, and $35 for children; call (601) 366-0708 for details.
Girlish appeal It's the second year for a High Tea fundraiser. "We thought it might be a fun, festive thing to do - an opportunity for mothers to do something with their young daughters that would be perky and springlike when it's not spring yet," said Leslie Hancock, the auxiliary's special events chairwoman. She noted an appeal, too, for grandmothers and granddaughters. "It's just something that appeals to the little girl in us who's always loved to dress up," she said. "It kind of takes you away." Increasingly, it's been bringing folks to the Fairview Inn, where teas offer a unique option for bridal showers, birthday parties and other social gatherings. "Especially with girls, it makes them feel good about themselves," says the Fairview Inn's Briana Berry.
English tradition
The inn has been doing teas since Peter and Tamar Sharp bought Fairview two and a half years ago. Peter is originally from England, where tea is a daily tradition, often just tea and crumpets and a pastry. "In the States, it's more of what they call high tea, where it's almost a four-course meal. You have your tea service first, then your finger sandwiches, then your scones, and then your pastries - dessert," he said. At Fairview, "It's a very genteel setting. We do it in the formal dining room up front. And we use bone china. So, it's a very elegant feel and the girls feel very special." That's the key. In an increasingly casual and hectic world, it's that lovely chance to stop, sip, savor the surroundings, appreciate the effort.
Plus, any excuse for a fresh, warm scone.

Get to Know Our Staff Lauren Johnson, Guest Service Manager
Originally from Tupelo, MS, Lauren has been with us at the Fairview Inn for almost seventeen months. Lauren was previously a manager at Aqua - the Day Spa. Lauren graduated from the University of Mississippi with a degree in Hospitality Management. Lauren likes to cook and enjoys playing tennis. She has a Cavalier King Charles pup named Gabbie (in the photo with Lauren above). Lauren oversees all individual and group reservations as well as assisting Briana coordinating small events. She supervises our guest service agents working nights and weekends. Lauren is most likely the first person you talk to when you call to make a room reservation. Lauren prides herself on taking care of the special details and requests of our guests and enjoys making sure all of our guests have a memorable experience.
