Fernando Pensato uses only 100 percent rare Peranzana olives to produce the highest quality olive oil. The Fernando Pensato estate consists of 10,000 olive trees from 50 to 150 years old. There is no use of pesticides or fertilization and the water source is provided from rain or spring water that gives birth on the property. The Peranzana olive is a medium-sized olive, and the oil it produces is low in acidity with a very balanced flavor. It is possible to gauge the flavor depending on the moment the fruit is harvested. Fernando Pensato Peranzana olives are handpicked when green and pressed in the traditional pink granite mills three hours after they have been harvested to insure the best quality possible and to avoid the oxidation of the fruit. The green olive releases a lower amount of oil, but also produces less acidity which makes the quality unsurpassable. The olives are first cold pressed and unfiltered. Fernando Pensato gently lets it set for a month, and only then proceeds for decantation to make sure it is free of impurities, leaving us with an immaculate oil of rare quality. Here is an example of how exclusive the product is: For an olive oil to be called "extra virgin", the acidity cannot be over 0.8 percent. Fernando Pensato Extra Virgin Olive Oil is at an astonishing 0.2 percent when bottled, making Fernando Pensato EVOO easily digestible and beyond compare for its flavor and perfect balance. The basil or truffles are sun-dried then placed into a canister with the Fernando Pensato Extra Virgin Olive Oil for one month. The oil is then skimmed off. Colomba Extra Virgin Olive Oil - 16.9oz. and 8.5oz.
This oil is made with a special blend of Peranzana, Leccina and Frantoia olives. They are late harvest black olives containing more acidity; still the oil doesn't pass 0.6 percent of acidity. |
