The Games are over, but not forgotten.  Hosting the world in our own backyard was very exciting and we should all be very proud - of our our athletes, our country and our Canadian culture.
 
 While not Olympian, we rose to many challenges in the month of February.
  We were invited to participate in The Pirates of Penzance and Edmonton Journal contest and hosted a Rum Tasting for the winners aboard The Santa Maria ship in the mall. Seven great rums were tasted and after an informal survey of the samplers, the favourite choice was Legendario Sweet Elixir Rum from Cuba.  But it was a tough decision as everyone agreed they were all great rums!
 
Our largest ever Metro Continuing Education Wine Appreciation Class took place in February too.  Twenty eager students led by Sommelier Heather Kingston received enlightenment into the fascinating world of wine, which becomes a lifelong passion.
 
We proudly took part in the Meyers Norris Penny Gala Fundraising Event at The Winspear in aid of The Support Network.  Hundreds attended, enjoying a fabulous selection of top brand Canadian wines, micro-brewed beers and premium scotches as well as a signature purple martini fountain, incredible food and the opportunity to bid on numerous live and silent auction items generously donated by sponsors.   The Wine Tasting for 10 people and the Scotch Tasting for 10 people we donated, raised a total of $2400.00 for The Support Network.  
 
This past week, Howard Romsberg, owner of Firesteed Wines in Oregon presented his portfolio to our trade group. Watch for some excellent rieslings, pinot grigios and pinot noirs from this award winning winery on our shelves.
 
As we gaze into March, we see another busy month, new products arriving weekly and the promise of spring.  Be sure to check our our events link on our website for lots of great things going on in Edmonton.  We have more classes lined up with Metro Continuing Education -- they book out fast so avoid disappointment and register early!
 
Lastly, thanks to the generous support of our customers, we donated a cheque for $300.00 to the Canadian Red Cross for Haiti Relief.

Meet Stephen - hailing from Ottawa, Stephen joined us in late January.  He is a Certified Sommelier who used to work in the wine making industry and was fascinated in experimenting with yeasts. Stephen will be pleased to help select your next bottle of wine.

RON ZACAPA 23 - Arriving Soon & in Limited Quantities!
Ron Zacapa Centenario is a popular premium rum produced in Guatemala.] Zacapa was created in 1976 to celebrate the centenary of the foundation of Zacapa, a town in eastern Guatemala.
It is made using the concentrated first pressing sugar cane juice, which is called virgin sugar cane honey, rather than molasses and is aged and blended using a unique aging system based on the solera method traditionally used for sherries. This process is overseen by master blender Lorena Vazquez. The company claims that part of their success lies in the fact that the barrels are stored 2,300 meters above sea level in an aging facility situated below the upper slopes of the mountains and volcanoes of Guatemala, where the temperature is an average of 62 degrees Fahrenheit. The Beverage Tasting Institute has given Zacapa a 98 point rating.

This wine is a fine effort from one of the top producers in Rhone.  It is a lush, medium to full-bodied wine that exhibits tremendous amounts of raspberries and red currants.  Hints of licorice and espresso also show up in the mix.  The finish is long and warming.  This is a wine that provides great drinking now, but will also reward short term cellaring.  Best to decant for at least 1 hour before serving.
 
Grape Varieties:  Grenache, Syrah, and Mourvedre
Wine Spectator Score: 91 pts 
Serve With:  Grilled and stewed beef, duck and other game birds, medium aged cheese such as cheddar

Feature Article         What is "Organic " Wine?

 
 Organic, Biodynamic, Sustainable, Carbon Neutral - all these terms are now finding their way into the wine industry. We are asked daily for organic wines by our customers.  But what are they......really?
 
Sustainable winemaking means doing everything to limit the carbon footprint in the vineyard. Growers abstain from using man-made chemicals and artificial fertilizers to improve their vineyards and in the wines they create.  Instead, natural fertilizers, and composting is used and  plants that attract insects are cultivated to benefit the health of the vines.  Sustainable practices used in the vineyards also extend to actions that appear to have little or nothing to do with the production of grapes, such as leaving areas for wildlife to flourish near vineyard sites. This provides vegetation for animals, which keeps them from eating the grapes.  Weeds and wildflowers that are allowed to grow between the vines stresses them and forces the production of fewer bunches of grapes with a greater concentration of flavour.  Also, using bio-diesel for tractors in the vineyards reduces harmful emissions among the vines too. Ultimately, sustainable winemaking encompasses the entire eco-system surrounding the vineyard with the goal that all the natural elements within the vineyard work in harmony with nature.
 
Taking things one step further, there are some significant differences in organic winemaking, both in the winemakers approach and the end result in the bottle. Grape growing, like any other farming is organic by origin. However, for many large wineries, it is not cost effective to risk poor yields. Chemical fertilizers  promote large yields and other chemicals can easily wipe-out vineyard destroying diseases.  Vines that are chemically fertilized and regularly sprayed for various diseases with chemicals are absorbed through the roots into the vine's sap, then passed through leaves, stems, and fruit. Finally, they are passed into your glass where eventually, we ingest them. Using chemicals also drastically reduces the natural terroir of the wine and diminishes the wine's fruit profile.  Organic wines are produced by using only organically grown grapes. No pesticides, herbicides, fungicides, chemical fertilizers, or synthetic chemicals of any kind are allowed on the vines or in the soil of these wineries. Strict rules govern the whole winemaking process such as hand-harvesting, types of yeasts used during fermentation,  and storage conditions in the vineyards of all imported and domestic wines that acquire organic certification.
While organic winemakers abstain from all chemical substances used to stabilize conventional wines such as sulfites, sulfites are a natural by-product of the fermentation process. It is impossible for any wine to be completely free of sulfites.  Wines  that are, are an accident of nature as fermenting yeasts present on all grape skins generates naturally occurring sulfites. Organic wines may have naturally occurring sulfites, but the total sulfite level must be less than 20 parts per million in order to receive organic certification.
The stricter government regulations for organic wine and the rejection of using added sulfites are, for all intents and purposes, the two key differences between organic and sustainable wines.
          
Biodynamic winemaking is much more than a simple agricultural system;  it is a worldview that greatly impacts the practice of winemaking in many ways.  Credited with founding biodynamic agriculture is Rudolf Steiner. Steiner's life-long goal was to bridge the gap between the material and spiritual world through his "spiritual science" of
anthroposophy
. Very late in his life, he turned to agriculture and his eight lectures, entitled 'Spiritual Foundations for the Renewal of Agriculture', were delivered a year before his death in 1925. These lectures are the cornerstone of biodynamic winemaking.
Understanding biodynamic winemaking means considering the vineyard as a living system that is closed and self-sustaining. Organic and biodynamic winemaking share many of the same attributes; biodynamic wines are produced by using only organically grown grapes. No pesticides, herbicides, fungicides, chemical fertilizers, or synthetic chemicals of any kind are allowed on the vines or in the soil of the vineyards. The grapes are harvested by hand, the vineyards are plowed by hand or horses, and only indigenous yeasts are used during fermentation. However, biodynamic winemakers see their vineyards in a much broader context that connects their vines and the year-long growing cycle with lunar and cosmic rhythms. In these vineyards the soil is not simply material for plant growth, but a living
organism. In the biodynamic winemaker's view, the idea of using synthetic fertilizers or pesticides would poison key components that promote the health and longevity of their vineyards. These growers use a series of special preparations to enhance the life of the soil, which are applied at appropriate times throughout the year in keeping with the lunar and cosmic rhythms of nature.

Initially taken in by the white peach and subtle lime aromas, we are delighted to also find the flinty, mineral, almost masculine thread running through this grand white wine.  Crisp, bright acidity perfectly balance the hint of rich honey.  The combination of intense citrus fruits and sweet spices mingle beautifully, taking the sensory experience to an explosive level that keeps on giving with the delicious, lengthy finish.

Sangria 
Prepare Sangria in a jug. Cut up some apples, oranges, lemons, strawberries and toss into the jug with ice.  Pour in Sangria, stir and serve with Paella!  A great way to beat the long winter blues.
