Along with all of the supplies and back to school shopping, you also need to get creative with lunches and quick easy dinners. Don't forget to include Gayle's BBQ Sauces in your meal ideas!

Lunch for Learning
BBQ Chicken PizzaOne chicken breast, cut in half and pan fried in olive oil for 6 minutes a side. Add salt and pepper. Cut into strips. Serve with BBQ dipping sauce.
Pour ¼ C of Gayle's BBQ Sauce in BPA-Free container for dipping.

Pack cold chicken strips and BBQ dipping sauce with favorite veggies and juice box.

After school... or easy dinner
1 cup diced cooked chicken
1/2 cup Gayle's BBQ Sauce
4 pita breads (6 inches)
1/3 cup real bacon bits
1 small onion, halved and thinly sliced
1 small green pepper, julienned
1 can (4 ounces) chopped green chilies
1 can (4 ounces) mushroom stems and pieces, drained
1 cup (4 ounces) shredded cheddar cheese

In a small bowl, combine chicken and barbecue sauce; spoon over pitas. Top with the bacon, onion, green pepper, chilies, mushrooms and cheese. Place on an ungreased baking sheet. Bake at 450° for 8-10 minutes or until heated through. Yield: 4 servings.
 
And for the final... a yummy dessert!
 
Apple Crisp On The BBQ
2 Apples
1 zest of one lemon
1/4 c. white sugar
2 Tbsp. flour
3 Tbsp. butter
1/3 c. flour
1/3 c. brown sugar
1 pch salt
1/4 tsp cinnamon
 
Preheat your barbecue to 350F.While you peel, core and chop the apples, have someone grease a baking tin. Toss the apples, lemon zest, white sugar and 2 Tbsp of flour together and put it in the tin.
In a bowl, rub the butter and flour together with your hands till you have a crumbly mix (with no lumps of butter). Stir in the brown sugar, salt and cinnamon, and spread the topping over the apples. Cover the tin with foil (cut some vents in it). BBQ for 25-30 min, till the apples have melted.

BACK TO SCHOOL TIPS...
BACKPACK SAFETY -
Choose a backpack with wide, padded shoulder straps and a padded back.
 
Pack light. Organize the backpack to use all of its compartments. Pack heavier items closest to the center of the back. The backpack should never weigh more than 10 to 20 percent of the your child's body weight.
Always use both shoulder straps. Slinging a backpack over one shoulder can strain muscles.

Consider a rolling backpack. This type of backpack may be a good choice for students who must tote a heavy load.
