Gayle's BBQ Peanuts These tasty BBQ peanuts are a delicious snack to serve with beer and wine. On top of that, peanuts are healthy - they are a good source of protein and are naturally cholesterol-free, low in saturated fat, plus contain over 30 essential vitamins, minerals and antioxidants. Combined with Gayle's BBQ Sauce, which is cholesterol-free, fat free, trans-fat free, saturated fat free, gluten free and preservative free!
I like to use Virginia peanuts because they have the largest kernels, and for me, that increases snacking satisfaction! Be sure to taste the peanuts as you're mixing them up so you can add the salt just to your liking.
Prep time: 3 minutes Cook time: 12 minutes Yield: 1 cup of nuts
INGREDIENTS 1 cup unsalted peanuts (shells removed) 1 tablespoon GAYLE'S BBQ SAUCE (any variety) Salt to taste Pinch of sugar
DIRECTIONS
Preheat oven to 400 degrees. Spread peanuts onto a cookie sheet and toast until lightly browned, about 5-7 minutes. Remove the pan and turn the oven down to 350 degrees.
Put toasted peanuts into a bowl. Add BBQ sauce, salt to taste, and a pinch of sugar. Mix well until all the peanuts are lightly coated.
Spread the peanuts out on the same cookie sheet. Bake the nuts at 350 degrees for 5 minutes until the BBQ sauce dries.
Heat the vegetable oil in a saucepan on medium-high heat. Add the drumstick and neck and sear until brown. Remove from pan and reserve.
Lower heat and saute the onions. Add the stock, scrapping up the fond on the bottom of the pan. Add the drumstick and neck into the saucepan. Cover and let simmer until it comes to a boil; about 1 hour. Sauce will reduce down greatly. Remove turkey parts. Add BBQ sauce to pan and whisk together. Gravy will thicken. Season with salt and pepper. |
Try a grilled dessert!
Is that a grilled peach recipe I smell cooking? Is that wonderful aroma of peaches, Amaretto, and vanilla really coming from your barbecue grill? Yes. Yes it is. If you are lucky enough to still have BBQ weather in November and want something different for for dessert, try grilling up this peach recipe. Grilled Amaretto Peaches, like all grilled fruit recipes, makes an excellent barbecue side dish. Or, add a scoop of ice cream, a dollop of heavy cream or whipped cream and it's dessert!
Grilled Amaretto Peaches
4 or 5 peaches, halved and pitted
Amaretto Sauce: 1 tablespoon butter 1/2 cup Amaretto 1/4 cup brown sugar, packed 1 teaspoon vanilla
Heat all the sauce ingredients in a small saucepan until the sugar is dissolved. Remove from heat.
Baste the enitre peach halves with the sauce and place them cut side down on the grill over medium-low heat. Cook them for about 3 minutes and turn.
Spoon some of the sauce into each peach half and heat for another 4 or 5 minutes, until soft.
Serve as a side dish or top with ice cream or lightly sweetened heavy cream for dessert. Serves 8-10. |
