Greetings!

I have always loved the color GREEN!

My birthstone is Emerald Green,
My eyes are Greenish,
I love keeping my garden green,
And always try eating green veggies...

But, nothing is more important, especially now, then to be an Earth Warrior! Think about future generations. They will never forget us. Remember, we do not inherit the Earth from our ancestors, we borrow it from our Children.

On another GREEN note:
Remember to celebrate St. Patrick's Day by wearing green, and using Gayle's Original BBQ Sauce in a typical Irish meal.

I love Corn beef and Cabbage smothered in Gayle's Original or Extra Sassy BBQ sauce.

Homemade Irish Cole Slaw
Ingredients
1 small, hard, red or white cabbage or ½ each
2 eating apples or
1 well-ripened Bramleys apples (substitute Granny Smith or Fuji if needed)
2 tb raisins
4 tb Honey
1 tb cider vinegar
1 good bunch of chives, along with sea salt and freshly ground black pepper to taste

Instructions
Discard any tatty outer leaves from the cabbage, then quarter it and remove the core. Shred the rest very finely and put into a large bowl. Peel and coarsely grate the apples and add to the bowl with the raisins, honey and vinegar (measure the honey with a heated spoon and warm it slightly if it doesn't run easily). Mix well, chop the chives finely with sharp scissors and add to the bowl with a good seasoning of sea salt and freshly ground black pepper. Mix well, cover and
leave in a cool place for an hour or two so that the flavors can
blend. Mix again and check the seasoning before serving.

Serves at least 8.
