HOW TO MAKE SPANISH PAELLA
Paella making is a wonderful excuse for a grand gathering. This dish lends itself to wide participation (if you would like); and the time it takes to make (anywhere between 1 and 4 hours - depending on how relaxed you are!) contributes to a fun time with friends and/or family.
I taped this webisode in the heat of the summer but it can be done even in winter time. Just make sure you have enough gas in your grill!

OUR NEW RESTAURANT - BAR SNEAK PREVIEW
The bar is kind of the heart of our restaurants and so that is why we pay so much attention to the details of its design and construction.
I am happy to report that construction is coming along very well and wanted to share a couple of pictures with you.

NEW ADDITIONS TO OUR WINE LIST
We continue making new additions to our wine list. This week we are introducing three fantastic by the bottle wines. They are all Italian. Here is the lineup:
Muller Thurgau DOC, Garlider Bottle $42
100% Muller Thurgau, Alto Adige, Italy
A tasty white wine which is a greeny to pale yellow in color. The aroma is flowery and reminds of grass and nutmeg. A fresh aromatic flavor. It is a good Aperitif wine, but can be paired with light starters, as well as cooked and grilled fish.
Teroldego Rotaliano DOC, Foradori Bottle $38
100% Teroldego (genetically related to Syrah), Trentino, Italy
89 points Robert Parker. Well-delineated, finessed aromatics lead to gorgeous fruit as this pretty, feminine wine flows from the glass. This Teroldego possesses superb balance and finesse at this level, not to mention an utterly irresistible personality.
Barolo DOCG, Luigi Pira Bottle $58
100% Nebbiolo, Piemonte, Italy
91 points Robert Parker: "hugely promising wine graced with fabulous inner perfume and tons of vintage character. The fruit is wonderfully open and expressive at this stage, and there is plenty of the house's trademark richness, but it all comes together in what appears to be an approachable, totally delicious Barolo." |
MENU SPECIALS OF THE WEEK
This week we are doing a couple of new and exciting things:
Caprese Salad con Prosciutto - $8
We have rolled up fresh mozzarella with prosciutto and basil to accompany sliced tomatoes and Italian bread sticks. A great way to start dinner.
Tuscan Pork Stew - $18
Pork shoulder marinated in red wine, species, onions, celery, carrots, tomatoes. Then slowly braised for several hours. Served over soft polenta.
Quaglia al Tartufo - $22
A blend of many flavors: delicately grilled pair of quails wrapped in pancetta. Stuffed with shiitake mushrooms sauteed with shallots and a hint of chipotle pepper. Served over soft polenta and topped with a truffle sauce. Must try! |
