We are competing for best restaurant in the Italian category (Mezzanotte) and in the Tapas category (Capriccio) in the contest that is conducted by KPRC Channel 2.

FIRST WINE TASTING AT CAPRICCIO
On Tuesday 1/27 we will be hosting our first wine tasting event at Capriccio. The format is different than the wine tasting/food pairing events at Mezzanotte. At Capriccio we will be sampling 5 wines and we will have some food appropriately paired with the wines. No reservations are required as you can come in anytime between 6 and 9 pm. The event will be held in the bar area. The cost is $18/person.

OLIVE OILS - PART 2
BUYING OLIVE OILS
All olive oil sold with the extra-virgin label must abide by the International Olive Oil Council standards. Still, read labels. Look for a use-by date. And see where the olives were grown. See if it says how long the olives spent between tree and mill. Olives start to deteriorate the minute they are picked, so the quicker they are milled, the better. Just because the label says it was "bottled in Italy" doesn't mean the olives were grown there. Italy can't supply enough olives to meet demand, so Italian companies buy olive oils from countries throughout the Mediterranean such as Turkey and Tunisia, and then ship it to Italy. The same goes for Spain and other major olive-oil producing countries.
Now... here comes the fun part:
TASTING OLIVE OILS
Olive oils can range in fruitiness, spiciness and bitterness. Educate yourself by buying several bottles and tasting them: · Pour olive oils into cups. · Although professional tasters do not take the color of olive oils into account, you can see they range from yellow to a bright green. · Nestle a cup in your palm to warm the olive oil with your hand. Swirl the cup, with your other hand over the top to hold in aromas. Inhale deeply and see if you smell fruit. · Sip a small amount and spread it through your mouth to see if it's smooth or greasy. Suck in air (a slurping sound will result) to detect flavors of grass or earthiness. · Swallow and then exhale through the nose to feel the level of spiciness at the back of the throat. · Positive attributes are fruitiness (maturity of the olives when pressed, variety and climate), pungency (the back-of-the-throat biting sensation) and bitterness (a pleasantly bitter taste). · Some defects are fusty (the olives started fermenting because they sat too long between the fields and the mill), musty (the olives started molding before being pressed) and rancid (resulting from oxidation of the oil). Tasting olive oils is an art just as tasting wines. You need to develop your palate by tasting different ones simultaneously until you can tell the difference (the differences are many times very marked). I hope you enjoy this exercise.

Delicate ravioli filled with pumpkin. Topped with a sage butter sauce and toasted walnuts. A must try as we only make it this time of the year.

Succulent veal chop laced with truffle oil and stuffed with pecorino cheese and prosciutto. Delicately grilled to perfection and topped with a madeira wine sauce. |

This week I am featuring my 2 favorite low cost (high value) Super Tuscans. Try one (or both of them) and enjoy!
Rosso di Toscana IGT - Renzo Masi 2004 - Bottle $36.00, Glass $9 This Super Tuscan red demonstrates the flexibility of the IGT regulations with a non-traditional blend of half Sangiovese, half Cabernet Sauvignon, aged 14 months in a combination of French and American oak. Inky dark garnet, almost black, it shows bright reddish-purple glints against the light. Aromatic, dark fruits, dried cherries and spice, more fruit than oak despite its long stay in wood. Juicy, snappy fruit flavors follow the nose, black fruit and lemony acidity; clean and lingering, with a whiff of fennel in the finish. Very impressive wine.
Rosso di Toscana IGT - Santa Martina
Bottle $28.00, Glass $7 A modern and distinctive wine from Tuscany. Santa Martina is a product of tradition and innovation. A blend of Sangiovese (40%), Syrah (20%), Merlot (20%) and Cabernet Sauvignon (20%), this wine is a marriage of culture's marked by earthiness, fruit and firm structure. | |
