Advanced Chocolate-Making Class with Madre Chocolate Saturday, October 8, 2011, 1 p.m. - 4 p.m. Ferguson Kitchen
After teaching 10 bean-to-bar chocolate making classes in Hawai'i over the last few years, Madre Chocolate co-founders Nat Bletter and David Elliot had many requests for a class to take people to the next step... learning about cacao bean cultivation, fermentation techniques, bean quality selection, participatory roasting, professional stone-grinder gear, and tempering machines & techniques. So to meet the demand, they have teamed up with Slow Food O'ahu to teach these techniques to those who want to get seriously fun about their chocolate making! You can learn more about Madre Chocolate at their website: http://madrechocolate.com

A Hidden Gem on Oahu: Thai food Sunday, October 30, 2011, 11 a.m. - 1 p.m. Pearl City
Join Slow Food O'ahu for some of the best hidden spots for Thai food in the state at the Thai Buddhist Temple in Pearl City.
The Thai cooks at this weekly event during the ruduu fon (Thai rainy season) have incredible street food that you won't find in any restaurants. They cook and sell this food at informal tables around the outside of the bustling temple in order to raise money for the temple. Some of the dishes include Khanom Jin (a curried noodle dish), Nim Khao (a pork & crispy rice salad that is insanely good), Tod Mun Pla (kaffir lime fish cakes), Som Tam (green papaya salad), Kaeng Naw Mai (bamboo shoot curry), and the ultimate Khanom Krok- little UFO shaped dumplings of sticky rice flour and coconut milk grilled to a perfect crunchy exterior with a gooey sweetened coconut cream exterior and topped with corn or scallions. They're incredibly addictive! We will order some of the highlight dishes for you and describe them but you are always free to walk around, talk to the vendors and order more! Hope you can make it for ahaan aroi maak (very tasty food)!
The food and ingredients will be described by our resident ethnobotanist, Dr. Nat Bletter. Dr. Bletter has 10 years of experience in botany, documenting exotic fruits and vegetables, gathering food in the wild, herbal and traditional medicine, and exploring Asia, South America, Central America, and Africa. He has a Ph.D. in Ethnobotany from the City University of New York and New York Botanical Garden and is currently a teacher and researcher at University of Hawai'i Manoa, where he researched medicinal plants of Peru, Mali, Thailand, Laos, and the Guatemalan Mayans, ethnobotany, taste-modifying plants, and stimulant plants such as cacao, which has spurred him to start a traditional-ingredient, high-antioxidant, artisinal chocolate company Madre Chocolate based in Honolulu, Hawaii.

A little bit of this and that...
- Our tour of Mari's Garden was cancelled but please look for it to be re-scheduled (and with a new format and lower price) in the near future.
- A reminder that Slow Food USA's membership special for the month of September results in $12.50 of every new membership being given to the local chapter for our events. So, if you are not a member, now is the time to join. Your membership will directly help Slow Food O'ahu.
- Thanks for the response on the Moloka'i grass-fed beef. We had a good response from our last newsletter. We will let you know when the next order is available.
