Even those who prefer salt over sweet recognize how just a touch of one propels the other to a higher gustatory plane. Many favorites embody this need for joining salt with sweet: Prosciutto with melon, those Salty Dogs that combine bittersweet chocolate with coarse sea salt, salted caramels, Sauternes and foie gras, Rieslings with rillettes, Port with a pungent blue veined Stilton -the list goes on and on and yet you wouldn't believe how many friends I know that initially claim to dislike sweet wines.

If sweeter wines are guzzled down in isolation, an argument might be made that they can overwhelm the senses but not so for the balanced wines out there and why do people analyze wines on their own anyway -as if they're looking to simply drink it as a cocktail? Wine is food. Like the flavors that contrast one another in a dish, wines are a part of a greater whole and are meant to join forces with every course of a meal.
