The Wines
 "Les Tilliers" comes from vines planted high on the hill of Vergisson. Facing southeast allows for complete ripening even at this high altitude and the loose soils yield their signature reading as the "prettiest" and most delicate of the Forest cuvees. Because of its elegance it needs the least amount of time in cask and never sees more than 15% new oak. The 2006 has hit a fine stride at four years revealing the bright, flint-and-steel qualities that read as crushed sea shells as the glass opens up. Eric Forest
After an apprenticeship of barrel aging and intensive lees stirring under Jean-Marie Guffens (Verget), Forest struck out alone in 2000 to craft full, voluptuous Pouilly Fuissé under his own label. His house style earned him an immediate and healthy following but all along Forest was sure his wines had more to say and over time, he moved away from the rich and creamy in favor of expressing the terroir of each of his gifted sites. He's worked his vineyards extremely hard to extract as much of Pouilly Fuissé with all its mineral nuance, layered fragrances, verve and texture. Today each wine seems the very voice of each vineyard site.
At work in his signature red shoes | In the village of Vergisson, the vine rows spread like an apron from La Roche de Vergisson in all directions. Despite sharing the very same soils and geology, every parcel has its own voice. While northerly and northeasterly plots are designated Macon-Vergisson, those fortunate vineyards facing southwest and southeast are designated Pouilly Fuissé. Here Forest crafts all his Pouilly Fuissé according to their site affording us a telling glimpse of each terroir. Like father, grandfather and great-grandfather before him, Forest tends six acres of the commune's finest plots. Planted during the 1960s, these vines are of an age where they may yield wines imbued by their sense of Pouilly Fuissé. Growing on privileged terroir imposes an absolute duty to exhibit their place. Vintners among the vines are often quick to confess the differences they taste between wines of one plot and another whether salient or subtle. Soils speak to the roots in the vernacular of minerals and drainage. Slopes say whether vine rows stretch out in the warm sun or do their best under northern exposure. Elevation tells the temperature that marks the time and level of ripeness. Climate calls out the truth of latitude and geography leaving all of us in awe of the sublime.  The paramount importance of place is undeniable. In southern Burgundy, south west of Macon, the sparse, limey, alkaline hills rise to form the small and beautiful appellation of Pouilly Fuissé. Atop this plateau two escarpments jut proudly like limestone reaching for the sky. From La Roche de Vergisson the eye may admire La Roche Solutré seen in the distance whilst the mind reflects on the mass of horse bones found at its feet telling us of early inhabitants who during the Paleolithic age hunted their equine quarry by driving the horses off the cliffs. 2 ½ million years down the line, we are fortunate to have Eric Forest putting these hills to the loftier purpose of expressing themselves through matchless wines.
