Spooky Ghost Cupcakes
Ingredients:
- All purpose flour - 1 cup
- Shortening - 4 tablespoon
- Sugar - 1 cup
- Egg yolks - 2
- Milk - 6 tablespoon
- Baking powder - 1 1/4 teaspoon
- Salt - pinch
- Vanilla essence - 1/2 teaspoon (optional)
How to make halloween ghost cupcakes:
Combine egg yolk, milk, baking powder, salt and vanilla essence and mix well. To this add shortening and sugar. Slowly add all purpose flour and beat well with mixer. Pour the batter onto greased cupcake pans. Fill the cupcakes half full. Bake at 375 degree for 20 minutes. It makes 18 delicious halloween ghost cupcakes. Kids will definitely love these cupcakes.
For halloween ghost cupcake icing:
- Cool whip - 1 12 oz
- Mini chocolate chips - 36
- Regular chocolate chips - 18
Directions for halloween ghost cupcake decorations and icing:
You can use a plastic bag with a corner sniffed off. Pipe cream onto corner of each cupcake. Postition 2 mini chocolate chips as eyes and one regular chocolate chip as a ghost cupcake nose.

 DAYS OF MY YOUTH - Growing up on Kauai

Just a little deviation this month from my usual childhood memories. I want to answer a question that is asked quite often: "Why did I leave Kauai?"
Well, the answer is - school. I was accepted at a University in the Pacific Northwest. I had never been to the "mainland" before and with great apprehension and excitement, I packed all my belongings into a small suitcase and carried what little savings I had in my pocket.
Before leaving, I went down to my grandparent's rice farm to say goodbye to my family. My brothers and sisters were all up in the branches of our favorite guava tree - eating the fresh sweet fruit. I can still picture them as if it were yesterday!
Oregon was just beautiful! On one school break, I went home with one of my classmates - their family had a farm that raised peaches, apples,
onions, etc. Just as I had left my siblings up in a guava tree, I was up in a peach tree instead. I ate delicious fresh peaches like I've never tasted before. Store bought ones were shipped to Hawaii usually force ripened. To this day, when I see fresh peaches, I remember that experience. And THAT'S why I left Kauai ..... Myron

HAIKU FARMS MINUTE (Monthly update on the rebirth of our family farm on Kauai) Well, Rory started some corn and not surprisingly - something ate them. Ha Ha! So what's new! Ti leaves are doing well so far. We're selling grapefruits, eggplant, avocados and some papayas. Not bad huh?! More news next month. - Clarice
