Mango Salsa
Enjoy this wonderful tropical fruit while it's in season!
Ingredients
- 2 large mangos, diced
- 1 tomato, diced
- 1 green bell pepper, diced
- 1/2 red onion, diced
- 1 jalapeno, seeded and diced (optional)
- 1 small bunch of cilantro, chopped fine
- the juice of 1 lime
- 1/2 teaspoon salt
Method
- Combine all ingredients in a bowl.
- Mix well and let set for at least 15 minutes before serving so flavors can combine.

DAYS OF MY YOUTH - Growing up on Kauai

TIDE POOLS
My cousin Gordon and I were the same age and we were almost like brothers. I would often tag along with his family on some of their outings. I used to enjoy going with Uncle Shige (Shee-geh) when he would take us all to the beach.
Gordon and I loved to play in the tide pools. We'd climb over the rocks and spend hours in the warm shallow water, looking for fish, and the occasional baby squid. Of course, boys will be boys and we used to poke the squid to see if it would squirt it's black ink. We never got tired of exploring the pools for interesting and colorful sea life. (We had no idea how fortunate we were to live in such a rich environment. I couldn't imagine that people actually PAY to see what a tidepool looks like in an aquarium!)
While we were playing, uncle and my older cousins would collect sea cucumbers and sea urchins. He'd carry an old cloth rice bag and fill them with these unusual creatures that were made into tasty Japanese delicacies.
Uncle Shige loved the ocean - he was an avid fisherman and also an experienced diver. I remember his huge glass display cases full of the most beautiful and unusual shells he collected from the bottom of the ocean.
I have such wonderful memories of those fun, carefree days, watching the surf and playing in the tide pools. ~~Myron

HAIKU FARMS MINUTE (Monthly update on the rebirth of our family farm on Kauai) We're trying to keep up with all the ti-leaf seedlings we planted. We also planted some eggplant (see picture). They're growing fast. There's always something that needs watering, weeding, fertilizing, planting, harvesting..... More news next month. - Clarice
