RECIPE OF THE     MONTH: 

 

      Miniature Sweet  

       Potato Pies

Makes:    12 minis or 2 full pies
Total Time: 3 hours 0 minutes
Prep Time: 30 minutes

Ingredients

  • 3 large sweet potatos (about 12 oz size each)
  • 1/4 c softened butter
  • 3 large eggs
  • 1 c packed brown sugar (light or dark)
  • 2 tsp nutmeg - or your own favorite combination of spices like cinnamon, cloves, or allspice
  • 12 fl oz evaporated skim milk or light cream
  • Unbaked pie crust - enough to make three standard pies

Directions

  1. Start by preparing those potatos. You can do it one of two ways. 1) Peel, quarter and remove any woody portions of the potatos and boil in a covered saucepan with just enough water to cover. After they soften (about 20 to 25 minutes), drain and place in a large mixing bowl. 2) Prick the skins of the potatoes and bake at 400 degrees for 1 hour or until tender. Cool, halve, scoop out the flesh and place it in the bowl.
  2. Heat the oven to 350 degrees.
  3. Add the butter to the potatoes and mash with an electric mixer on low speed.
  4. In a separate bowl, whisk the eggs for 1 minute or until foamy. Whisk them into the potatoes, add the sugar and nutmeg and blend on low speed until combined. Gradually add the milk or cream and beat until smooth.
  5. Roll out the pie dough. Let kids make mini pies by shaping pieces of dough into muffin tins or mini tart pans, or line two 9-inch deep-dish pie pans with pie dough.
  6. Pour the filling into the shells and place on the lower rack of your oven. Bake mini pies for 25 minutes and deep-dish pies for 1 hour. When baked, the crust will be golden and the top will be set.
  7. Cool for 2 hours. Refrigerate, loosely covered with plastic. Serve with whip cream or ice cream.

We have so much to be thankful for - we appreciate your continued patronage since we opened in 2003!

HAWAIIAN WORD OF THE MONTH 

 

Here's a word that has different meanings:  

     Hana - pronounced  

            hah nah

 

Hana, Maui - a famous town that takes hours to get to - "I survived the road to Hana"
if you make it to the end
Hana -work
Pau Hana - finished with work
Hana hou! - One more time!  Usually called out to entertainers for an encore

Hana koko lele - Shame on you!  (Kid's tease:  Usually said when you get caught doing something wrong!)
PIDGIN CORNER - LEARN SOME LOCAL "SLANG"

Boro boro (boh roh boh roh) (roll the "r")
or Boro Boroz 

Translation:  Ratty, worn out, usually clothing

Local girls are funny - they might be wearing thousands of dollars worth of gold Hawaiian jewelry and run around with boro boro clothes!

       Thanksgiving - Plantation style 

I am so grateful for the close knit community that existed in the plantation camp where I grew up.  Everyone worked hard to provide for their own families but somehow, there was also a sense of looking out for your neighbor.  When food was tight, someone would leave a bag of fruits or vegetables on your door step.  If you had extra fish, it was always to shared.  We wouldn't dream of wasting when there was someone who could benefit.   We were all struggling and yet everyone shared what they had.

On Thanksgiving - no matter what your heritage, every house would have a turkey - but the rest of the table was filled with their own ethnic delicacies.  If I was tired of eating nishime, I could go to a friends' house and eat korean food or go down the street and eat bibingka (Filipino) or malasadas (Portuguese). 
 
Today, our table is full of food - more than we can eat- yet, I still remember fondly the days of long ago when having a full table meant so much more!

HAIKU FARMS MINUTE
(Monthly update on the rebirth of our
family farm on Kauai)  

 

The wild animals...dirty licken's we taking!  They are wiping out the fields and started destroying the ti leaves too.  We took out luau leaves at first farm and replanted at third farm.  They are doing well there.  Also planted ti leaves on third farm.  So far, the pigs have not destroyed these.  It's pretty frustrating.

Along Maui's rugged eastern coastline is the peaceful town of Hana, considered one of the last unspoiled Hawaiian frontiers. The legendary road to Hana is only 52 miles from Kahului, however the drive can take anywhere from two to four hours to complete since it's fraught with narrow one-lane bridges, hairpin turns and incredible island views.


The Hana Highway (HI-360) has 600 curves and 54 bridges. The road leads you through flourishing rainforests, flowing waterfalls, plunging pools and dramatic seascapes. There are plenty of opportunities to stop and enjoy the lovely views, so get an early start and take your time on your drive.
