RECIPE OF THE MONTH:

 

Kona Coffee Cupcakes!

Try this yummy looking  

cup cake recipe! 


Ingredients:

  • ½ cup Kona coffee, hot
  • ½ cup cocoa powder
  • ½ cup water, cold
  • 1 ½ cups cake flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ cup (1 stick) butter, unsalted
  • 1 ¼ cup sugar granulated  
  • 2 eggs
  • ¾ teaspoon vanilla

Directions:

Dissolve the cocoa powder in the hot Kona coffee. Mix in the cold water until smooth. Set aside. Sift the cake flour with the salt, baking powder and baking soda. In a large mixing bowl, cream the butter with sugar.  Beat in the eggs and vanilla.

 

Gradually add the coffee and flour mixtures, alternating until the batter is brown and smooth. Scoop into muffin tins lined with cupcake paper. Bake in a preheated oven at 350 degrees F for 20-25 minutes, testing for doneness with a toothpick. Remove from the oven and let the cupcakes cool completely before frosting them.

 

For the frosting

(Adapted from Coffee Fair)

  • 1 tablespoon instant Kona coffee crystals Mulvadi brand
  • ¼ cup milk
  • 3-4 cups powdered sugar  
  • ¼ cup cocoa powder
  • 6 tablespoons butter
  • 1 ½ teaspoons vanilla  

Directions

Dissolve the Kona coffee crystals in milk. Sift the cocoa powder with the sugar. In a mixing bowl, cream the butter with the cocoa-sugar mixture. Add the vanilla and stir until the frosting has a spreadable consistency. Fill a pastry bag and use a star tip to make decorative swirls on the cupcakes. Top with a chocolate-covered Kona coffee bean.

Happy Mother's Day!

 

Remember mom on Sunday, May 8.  If your mom isn't around-- adopt one!  See if there's a lonely senior lady you know or a single mom with young kids....they would greatly  

appreciate a kind word or deed...

Looking for a place to take mom on her special day?  The May Day Festival by the Kumu Hula Association of Northern California will be held May 7-8 at the Alameda Fairgrounds in Pleasanton.  Mom's get in at a reduced price.  Check their website for more info.  They will have outstanding hula performances and shopping and Hawaiian food available too.  

 

Don't forget to honor our fallen service members on Memorial Day.  Such sacrifice for others have made this country free.

(Please honor those currently serving in the military too).

HULA 

   APRIL SHOWERS BRING MAY FLOWERS


When we were growing up, May 1st was a big celebration.  I guess "mainland kids" danced around the May Pole, school kids in Hawaii would perform different hulas and wear lei's.  If you were lucky, you might have a new muumuu (dress) or Aloha shirt for that day. 

We made our own leis from tiny pakalana, maunaloa and crown flowers that were readily available in our yard or in
the jungle.

Memorial Day - to honor the fallen soldiers, the kids used to make and bring leis to school.  They would then be placed on the many soldiers' gravesites throughout the      island by the local Boy Scouts.

The significance of Memorial Day seems to be lost in today's culture.  THANK YOU to all veterans for protecting our precious freedom.

HAIKU FARMS MINUTE
(Monthly update on the rebirth of our family farm) 


"There is an animal that has been decimating all our new shoots that we haven't been able to even identify or apprehend.  Rory now has a legal permit to shoot at night and personnel from the State Department of Land and Natural Resource Wildlife Dept are also monitoring the area.   We have decided that until this animal is caught, we are going to start a new field on the third farm.  It's going to take another 9-12 months before we can pick the leaves.  I now think its a goat.  More news next month.

Kona Coffee 

Kona coffee is the market name for coffee (Coffea arabica) cultivated on the slopes of Hualalai and Mauna Loa in the North and South Kona Districts of the Big Island of Hawaii. It is one of the most expensive coffees in the world. Only coffee from the Kona Districts can be described as "Kona". The weather of sunny mornings, cloud or rain in the afternoon, little wind and mild nights combined with porous, mineral rich volcanic soil, creates favorable coffee growing conditions.

 

The coffee plant was brought to the Kona district in 1828 by Samuel Reverend Ruggles, from Brazilian cuttings.[2]:9 English merchant Henry Nicholas Greenwell moved to the area and established Kona coffee as a recognized brand later in the 19th century. The former Greenwell Store and Kona Coffee Living History Farm have since become museums.[3]

In other parts of the Hawaiian islands, it was grown on large plantations, but the 1899 world coffee market crash caused plantation owners to lease land to their workers.[2]:70 Most were from Japan, brought to work on sugarcane plantations. They worked their leased parcels of between 5 and 12 acres (49,000 m2) as family concerns, producing large, quality crops.

The tradition of family farms continued throughout Kona. The Japanese-origin families have been joined by Filipinos, mainland Americans, and Europeans. There are approximately 800 Kona coffee farms, with an average size of less than 5 acres (20,000 m2). In 1997 the total Kona coffee area was 2,290 acres (9 km2) and green coffee production just over two million pounds
