RECIPE OF THE MONTH:
MANGO SALSA

Ingredients

1 ripe mango, peeled, pitted, and diced (about 1 1/2 cup)
1/2 medium red onion, finely chopped
1 Jalapeņo chile, minced (include ribs and seeds for a hotter taste if desired)
1 small cucumber, peeled and diced (about 1 cup)
3 Tbsp fresh cilantro leaves, chopped
3 Tbsp fresh lime juice
Salt and pepper to taste

Also good with diced red bell pepper and jicama.

Method

Combine all of the ingredients in a bowl. Season to taste with salt and pepper. If the salsa ends up being a little too hot or acidic for your taste, you can temper it by adding some diced avocado.

Kilohana Trivia

   Hawaiian Barbecue Beef

We start with top quality thinly sliced rib eye beef that we marinate and barbecue to order.  The tender and tasty meat is one of the top favorite items on the menu!

For those of you grill cooks out there, you can appreciate the special handling for grilling such thinly sliced meat.  We have to be careful not to burn it, overcook it or let it fall through the grill.

We serve over a thousand pounds of Hawaiian Barbecue Beef per year.

DAYS OF MY YOUTH - MYRON KASHIMA

HULA FAMILY & TRADITION

I went home recently for a family reunion - the last one was held over fifty years ago!

We had a nice get together and I was surprised to find I had more relatives than I knew about!  It was great to see my cousins who used to watch me when I was little, trying to keep me out of trouble down on the family rice farm.

In a previous newsletter, I talked about the annual  New Year's day  "mochi pounding" tradition where the extended family gathered together to pound
sweet rice into a  treat called mochi.  My cousins on Kauai have kept up the yearly event.  Many of us that have moved away have not participated in this tradition for decades!

It was wonderful to see the older generation teaching the younger ones how to pound the rice with the large wooden mallets. The rice was placed in a large stone bowl and was continuously turned between strokes.  This special bowl has been in the family for generations.  When the rice becomes the right consistency, the women take over and the globs of rice is shaped into individual small ball like shapes.

Of course, the best part is in the eating!  And it tasted as wonderful as it did when I was six years old.

This event made me realize the importance of keeping  our  traditions alive and pass it to the next generation.  It bonds the family together and enlightens the younger ones.

Please do the same with your own family if you are able. As we are all aging, let's share our growing up times with the younger ones to help them appreciate and understand your own family history.

Aloha, Myron
HAWAIIAN WORD OF THE MONTH

"No Ka Oi"           Translation:  The Best
Years ago, there was a popular saying:
"Maui No Ka Oi" or Maui is the Best!
Of course, all the people on the other islands didn'
t agree!

"Chicken Skin"  Means:  Goose bumps

I watched one scary movie last night and it gave me chicken skin!

PLACES OF INTEREST:   SHOPPING - OAHU

If you're traveling to Oahu, there are several great shopping areas on the island.  Best one is the Ala Moana Shopping Center.  There are 290 stores and a great food court to satisfy anyone's appetite!  There are high end stores like Coach and Fendi and the more commonly recognized stores like Macy's, Nordstroms,JC Penneys.  This is a must - it's a lot of stores in a beautiful setting. They often have free entertainment on their center stage.

Waikiki has it's own shopping areas that will give you plenty of great shopping, not necessarily at bargain prices.  Great for window shopping!

If you want to find great bargains, go where the locals go, Make your way down to the Aloha Stadium to the "Swap Meet" held Wed, Sat 8 AM to 3PM, Sunday 6:30 to 3PM.  It's the usual setup - rows and rows of individual booths selling all kinds of Hawaiian stuff that you see at the "real" stores but at discount prices.  Nothing fancy, it's usually hot but kind of fun to "hang loose" with the locals.
