RECIPE OF THE MONTH:

Maui Onion Crab Cakes

1999
Maui Onion Festival Winner


2 lb Fried Maui Onions, chopped
1/2 lb Crab Meat
1 lb Bread Crumbs
1/2 c Celery, diced
1 med Red Bell Pepper, dice
3 ea Eggs
1/2 T Tabasco
1 T Worcestershire Sauce
Salt & Pepper to taste
Optional: String Cheese, diced


Chipotle Mayonnaise Sauce:
1 sm Chipotle Chili, chopped
1 c Mayonnaise
6 drops Fresh Lemon Juice
1 ea Garlic Clove, chopped
Salt & Pepper

In a mixing bowl, place chopped Maui onions that have been previously coated lightly with flour and deep-fried to achieve a crisp texture. Add crabmeat, breadcrumbs, celery, bell peppers, eggs, tabasco and worcestershire sauce. If desired, add string cheese to the ingredients. Mix together evenly with a spatula or by hand. Season with salt and pepper. Mix well. Then, take a portion of the mix and mold into a circular crab cake by pressing together and shaping by hand. After shaping all the remaining mix, place into a preheated, oiled cooking pan. Fry till both sides are golden brown. Prepare chipotle mayonnaise sauce by combining chili, mayo, lemon juice, garlic, salt and pepper together, stirring until blended. On a serving dish, pour a little bit of the sauce on the surface and then place the cooked crab cakes on top. May serve chipotle mayonnaise sauce on the side also.

May Day is Lei Day in Hawaii!

 "May Day iHULAs Lei Day in Hawai'i" -- it's a song and a custom and a festival.  In Hawai'i on the first of May, everyone wears flowers, schools stage pageants and  contests are held for the most beautiful lei or garland, a Queen is crowned, competitions in both ancient and modern hula are held. All the girls wore their prettiest muumuus (hawaiian print dress) and everyone wore flower leis.   I remember each class at school would have to learn a different hula or dance for the May Day celebration.

This year, grab mom and spend Mother's Day at the May Day Festival at the Alameda Fairgrounds in Pleasanton.  The Kumu Hula Association will have hula presentations and lots of Hawaiian crafts and food to enjoy.  (Go to their website and print their coupon for a Mother's Day discount!)

HULA  KITE FLYING-
PLANTATION STYLE


On a recent trip home to Kauai, we were reminiscing about the old plantation camp and Funada Store came to mind.  The store sold beautiful Japanese kites with colorful samurai warriors painted on them.  All the kids wanted one of those fancy kites but we didn't have the extra money to buy them.  Instead, we would make our own kites out of newspaper, bamboo sticks for the frame and string.  We would use rice or poi (taro paste)  for the glue, old strips of T shirts were great for the tail. 

Of course, boys will be boys and we added some competition to our kite flying.  We extended the top of the center bamboo stick and sharpened the point.  Then we had a blast trying to rip the other kids' kites.  No worries if they got torn, there was more newspaper and glue to make a new one and then we were flying again!

The Nuuanu Pali Lookout ("Cool Height Cliff") overlooking the 985 foot cliffs of the Koolau Mountain Range, is one of the best views on O'ahu. It was here in 1795 that King Kamehameha and his warriors defeated the O'ahu armies by sending them over these steep, forested cliffs and claiming his victory and uniting the Hawaiian Islands. The breathtaking sight and the gruesome history of the battle fought here is enough to cause a chill to run up your spine. Add to that the incredible winds that often pass through the Pali and you may be swept off your feet!
