The No Turkey, Turkey By: ChristinaW By: ChristinaW "This vegetarian treat is a beautiful addition to the Thanksgiving holiday table. My family has been making it for years. You won't even miss the turkey! For a shiny crust, brush pastry lightly with soy milk. To serve, cut straight down through pastry, stuffing, and seitan to make neat 1/2 inch slices. Spoon additional gravy over each serving."
Cook Time:1 Hr 10 Min Ready In: 10 Hrs 15 Min SERVINGS 10 Ingredients 2 (1 pound) loaves multigrain bread 2 tablespoons margarine 2 carrots, minced 2 large stalks celery, minced 1 onion, minced 1/4 cup chopped fresh parsley 1 teaspoon crumbled dried sage ground black pepper to taste 5 1/2 teaspoons egg replacer (dry) 1/2 cup water 1/2 cup vegetable broth 2 (16 ounce) packages chicken-style seitan, cut horizontally into 1 inch thick strips 1 cup garbanzo bean gravy 1 (17.5 ounce) package frozen puff pastry, thawed Directions Tear bread into 1-inch cubes and place into a large bowl. Let bread dry in the bowl, uncovered, at least 8 hours. Melt margarine in a large skillet over medium-high heat. Stir in carrots, celery, and onion. Cook and stir until the onion has softened and turned golden brown, about 10 minutes. Scrape onion mixture into the bowl with the dried bread; season with parsley, sage, and pepper. Whisk egg replacer, water, and vegetable broth in a small bowl until smooth. Pour over bread cubes and gently fold until evenly mixed. Let stand 30 minutes to allow bread to absorb the liquid. Preheat an oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and coat with nonstick cooking spray. Brush seitan with gravy on both sides; arrange overlapping slices on foil in a row, mounding in the center. Press stuffing mixture around seitan to cover. Wet hands lightly and press into a neat oval. Roll pastry sheets out to 1/16-inch thickness; arrange, overlapping slightly, to make a large rectangle. Seal edges with dabs of cold water. Drape pastry over mound; trim excess away from bottom. Use scraps to cut out decorative shapes (leaves, apples, etc). Attached with dabs of cold water. Bake until the pastry in deep golden brown, 1 to 1 1/4 hours. Cover the pastry with aluminum foil if it begins to brown too much.

Top with remaining onions. Bake for 5 min. more.

Ingredients 1 pound red potatoes, quartered 2 tablespoons diced onion 2 tablespoons butter, melted 1 tablespoon honey 1 teaspoon dry mustard 1 pinch salt 1 pinch ground black pepper
Directions Preheat oven to 375 degrees F (190 degrees C). Lightly coat an 11x7 inch baking dish with nonstick cooking spray.
Place potatoes in a single layer in prepared dish, and top with onion. In a small bowl, combine melted butter, honey, mustard, salt and pepper; drizzle over potatoes and onion.
Bake in the preheated 375 degrees F (190 degrees C) oven for 35 minutes or until tender, stirring halfway through the cooking time. ____________________

Servings 8 Original Recipe Yield 1 - 9 inch pie
Ingredients 1 sugar pumpkin 1 recipe pastry for a 9 inch single crust pie 2 eggs 1 cup packed light brown sugar 1 tablespoon all-purpose flour 1/2 teaspoon salt 2 1/2 teaspoons pumpkin pie spice 1 (12 fluid ounce) can evaporated milk
Directions Cut pumpkin in half and remove seeds.
Place cut side down on a cookie sheet lined with lightly oiled aluminum foil.
Bake at 325 degrees F (165 degrees C) for 30 to 40 minutes, or until the flesh is tender when poked with a fork.
Cool until just warm. Scrape the pumpkin flesh from the peel. Either mash, or puree in small batches in a blender.
Increase oven temperature to 450 degrees F (230 degrees C.) In a large bowl, slightly beat eggs. Add brown sugar, flour, salt, 2 cups of the pumpkin puree, pumpkin pie spice, and evaporated milk.
Stir well after each addition.
Pour mixture into the unbaked pastry shell.
Place a strip of aluminum foil around the edge of the crust to prevent over browning.

Greetings!
It's hard to believe that Thanksgiving is almost here again! And I can't think of a better time to reflect on all our blessings. Like you, I'm sure your list will begin with your immediate family. This year, I am more thankful for my family than I've been in some time. This is probably because I have a college student son (who I miss terribly) and my other son just beginning college. So of course, I am very happy when we can all be together.
Next on my thankful list is you. Many businesses were adversely affected with the down economy and some are now gone for good. We,too, suffered a great loss from the sudden loss of work. But thanks to our loyal customers like you, we made it through the worst and now are on the up side of getting back on our feet again. So before I go on I really need to say Thank You!

"A series of three winter storms swept across the Pacific Northwest
during the December 14-22, 2008 time period producing significant
snowfall amounts across the region. An arctic air mass moved into the
region on December 14 and persisted through Dec 22. During this period,
valley temperatures in the teens to mid 20s were common.
On December 14th, a surface low pressure system slid
down the Oregon and Washington coastlines, allowing an arctic air mass
to build in the Columbia basin. Arctic air surged through the Columbia
River Gorge, and over the Cascade mountains, filling the Willamette
Valley and even plunging the coast into sub-freezing air. This would
mark the beginning of a cold, and very snowy period that would last
through Christmas Day for much of northwest Oregon and southwest
Washington." Who could possibly forget last year? Early estimates suggested that the damage in dollars would be between 3 and 4 million. Many of us were caught totally off guard and suffered losses that could have been prevented if we had taken the time to prepare. Last year many people were caught off guard when the the worst snow storm in sixty years hit. You don't have to be unprepared this year.Casey's Plumbing will do a complete "winter preparedness" evaluation FOR FREE, with any work done through February 15th, 2010.This evaluation will include a complete inspection of the foundation vents and outside faucets. These are the top two areas that go unprotected and cause ruptured pipes during a hard freeze. It doesn't matter that the pipes in your crawl space are insulated if the foundation vents aren't blocked. With the freezing wind whipping under the house, the insulated pipes will still freeze; it will just take a little longer. The other most common problem that leads to freeze disasters are outside faucets that haven't been properly winterized. Many people develop a false sense of security because they have "turned off the outside faucet". For a modern outside faucet, turning off it's service valve is only the first step. There are as many as 3 more important steps you need to take to properly winterize these outside faucets. See October's Newsletter for detailed instructions. So don't put it off another minute! If you're not absolutely sure that your home is properly "winterized", get it checked out today! It could save you thousands in repair bills.

IS YOUR HOME A POTENTIAL FIRE HAZARD?

If you have a Federal Pacific electrical panel in your home, you may indeed have a potential fire danger.

 FPE Stab-Lok(R) Circuit Breakers Fail to TripHigh failure rate: The central safety defect in FPE Stab-Lok(R) electrical equipment is that FPE Stab-Lok(R) circuit breakers fail to trip under overload or short-circuit conditions, at a failure rate much higher than comparable equipment made by other producers. This failure to trip occurs up to 80% of the time when the breakers are called-on to trip, depending on the individual breaker type and load. The usual industry rate of failure of a circuit breaker to trip in response to an over current or short circuit is much less than 1%. Risk of fire or injury: When an overload or short circuit occurs in an electrical device, say an electric clothes dryer, the circuit supplying electricity to the device is supposed to be interrupted, electrical power cut off, by either a fuse or a circuit breaker. This interruption of electrical power is intended to minimize the resulting fire hazard of electrical overloads or short circuits. A circuit breaker that fails to trip, is unsafe. It fails to protect the electrical circuit, the building and building occupants where that circuit breaker is installed. This can lead to fire, property loss, and injury or worse.FPE Stab-Lok(R) Circuit Breakers Are a Latent Safety Hazard.A "latent safety hazard" means that the product itself does not initiate the unsafe condition. Rather, when the unsafe condition occurs (as just described above), the product, in this case an FPE Stab-Lok(R) circuit breaker, which is intended to interrupt electrical power, fails to do its job. An impartial review of documentation regarding this issue, and discussions of the issue with forensic experts in the field, make clear that a latent hazard exists where FPE Stab-Lok circuit breakers continue in use. The hazard is worst for double-pole breakers. Published reports of actual tests that were performed indicate that under certain conditions it is possible for one leg of these circuits to attempt to trip the breaker, resulting in a jammed breaker which will afterward not trip under any load condition. An FPE Stab-Lok Electrical Panel Should Be Replaced, not "Inspected by an Electrician" and not "Tested". Having the FPE Stab-Lok panel evaluated by an electrician is unfortunately of absolutely no value. A visual inspection can not predict whether a circuit breaker is going to jam on the next occurrence of an overcurrent or short circuit. While a visual might pick up evidence of a previously burned circuit breaker or panel bus connection, the absence of such evidence is not any assurance whatsoever that the panel is safe. Having the FPE Stab-Lok panel "tested" by an electrician is dangerous. For example, placing an over current load on an electrical circuit in the building could cause a fire to occur. Further, placing an over current load on a circuit "protected" by an FPE Stab-Lok circuit breaker may actually increase the chances that the circuit breaker will fail to trip in the future, even if it appears to work when tested. Aronstein's research showed a dramatic increase in the jam-up and failure rate in these circuit breakers after they had been exposed to a first "event" such as an over-current. "But Up to Now the Electrical Panel has Never Shown a Problem!"A statement by a building owner or occupant that no problem has been observed in a particular FPE Stab-Lok panel is absolutely no assurance that the panel is safe. It may simply be the case that the building has not experienced an over-current or short circuit on an electrical circuit. Or an over current may have occurred, tripped a breaker, but in doing so, increased the chance that next time the same breaker will fail to trip. It would be dangerous for a building seller, for example, to warrant the future safety of an electrical panel in the building s/he is selling.It would be dangerous for a building buyer to rely on the claim by a seller, real estate agent, or electrician that an FPE Stab-Lok electrical panel is "safe" since all independent research indicates otherwise. If it's an FPE Stab-lok electrical panel, it should be replaced, period.FPE Stab-Lok(R) Equipment Means Latent Fire Hazards
It's the exceptions that cause fires. An FPE circuit breaker will appear to "work just fine" in passing along current to the circuit it feeds, until there is an over current, short circuit, or similar condition. When those exceptional conditions occur, this equipment fails to protect the circuit and the building from overheating and fires, in some cases at a failure rate around 60% of the time. I estimate that the normal industry failure rate on circuit breakers is less than .01%. Consumers should read and follow the Commission's advice regarding circuit breakers. But this advice is insufficient. The Commission's admonition to avoid overloading circuits and to turn off and have examined devices which seem to be creating a problem is a poor substitute for reliable, automatic, overcurrent protection. It is precisely because dangerous conditions can and do occur without adequate recognition and action by a consumer that circuit breakers and fuses are installed to provide overcurrent protection in the first place. Therefore it is hardly an adequate "fix" for FPE breakers to just tell consumers to handle these cases manually. It is possible that some breakers may perform with adequate reliability, possibly those manufactured after the companies discovered safety defects and improper practices in listing the product, and possibly those manufactured in Canada. However, in absence of an explicit statement from the manufacturer and/or the US CPSC indicating that newer stock equipment is defect free, and considering that defects occur in both breakers and the panels themselves, and finally, that testing showed failures in both in-use equipment and new off-the-shelf devices, my advice to consumers and electricians is that these panels be replaced with newer equipment, particularly those which use 240-volt double-pole breakers described in the literature. In my opinion, if a fire or other hazard occurs with this device, neither the manufacturer nor the Commission, who have suggested in the press release that data was inconclusive or inadequate to establish a hazard, will accept responsibility for losses that may ensue. However a building inspector, home inspector, or contractor who makes any warranty of safety, by virtue of his/her position close to the consumer, is certain bear this very liability. So Is There an FPE Stab-Lok(R) Safety Problem or Not? Current research now confirms the safety hazards of FPE Stab-Lok(R) equipment and documents its failure rates.Using a larger pool of FPE Stab-Lok circuit breakers than the older CPSC and Wright Malta tests found significantly higher failure rates of FPE Stab-Lok circuit breakers, including a look at critical safety failures (breaker failed to trip at 200% of rated current or jammed) which found: - 80% failure rate for FPE Stab-Lok GFCI circuit breakers (n=4)
- 12% failure rate for double pole FPE Stab-Lok circuit breakers (n=120)
- 1% failure rate for FPE Stab-Lok single pole circuit breakers (n=345)
[The significance of these numbers can be understood more clearly if you consider that the typical failure-to-trip rate for circuit breakers in residential electrical panels is a small fraction of one percent. How Did These Unsafe FPE Stab-Lok(R) Circuit Breakers Get Into Homes? "In a class-action lawsuit against FPE/Reliance in New Jersey, the Court found that Federal Pacific Electric Co. (FPE) committed fraud by representing that their FPE Stab-Lok(R) circuit breakers met the applicable (UL) standard test requirements when in fact they did not. The Court's finding of fraud, published in 2005, indicates that FPE cheated on the tests that were required to obtain UL listings. The company improperly applied UL labels to circuit breakers that could not and did not meet the UL requirements. FPE covered up the defective performance of the circuit breakers by a long standing practice of fraudulent testing. The Court's finding helps resolve the question as to how the defective breakers got into the marketplace and into homes." -- 2007 FPE Stab-Lok TECHNICAL REPORT, p.1, Dr. Jess Aronstein [available at this website].Companies, Attorneys, Realtors, Home Sellers, Home Buyers with Conflicting Interests. A home owner who intends to continue living in a home, or someone buying a new home, has a great interest in assuring that the home's electrical system is properly protected and safe, as does their insurance company. However in some circumstances such as wanting to push through the sale of a home without incident, or wishing to avoid admitting potential liability, or perhaps out of lack of accurate information, some people may still assert that this well-documented safety concern does not exist.Some insurance companies now require that their policy holders replace FPE Stab-Lok(R) equipment in the home before they will issue homeowners insurance for the property. CLOGGED DRAINS ON THANKSGIVING DAY?

Every year during the holidays, we get get inundated with clogged sink calls. And of course, we are always happy to solve these problems but I'm sure that each one of them would have preferred that their drains hadn't clogged in the first place.
Here are some tips to avoid clogged drains during any season...
KITCHEN SINKS/GARBAGE DISPOSALS By far, the largest number of calls we receive during the holidays are kitchen sink clogs. Most of these began with the garbage disposal.
It's a common misconception that the disposal "caused the problem". Indeed, most disposals do a fine job of doing what they are supposed to do, to grind and send material into your drain system.
The real problem is usually caused by...
- Putting too much material in at once
- Not using enough water
- Insufficient or damaged drain pipes
Solutions for each of the 3 above causes...
- Put in small amounts of material and do this several times instead of one fell swoop. (With my disposal, I scoop up as much material as I can with my hands, toss it straight into the garbage can under the sink and use the disposal for the small amounts I missed).
- This is a real common problem. Turning the water off before the material is washed completely down the drain. Solution - RUN LOTS OF WATER.
- Insufficient or damaged drain piping. If this is the problem, there are only a couple of solutions to remedy it. First, keep your drains maintained. If your drain system hasn't had a major drain cleaning in over 20 years, schedule one now. Over time your pipes will begin to build up with soap, grease, etc., thus restricting your drain flow. A mechanical drain cleaning followed up with a good hydrojetting (high pressure water), will usually restore and open these drains completely. And to keep them open, you need to treat them with a good Bio product like Drain Maid. If the problem is because the pipes are too old, undersized or damaged in anyway, the only solution is to replace them.

TIPS FOR THE HEATING SEASON

SAVING ENERGY - SAVING $
· Lower heat settings at night and when no one is home. A programmable thermostat can be set to do this automatically.
· Have an annual inspection and maintenance done on the furnace. A heating and cooling professional can perform an annual inspection and routine system maintenance to make sure your furnace is operating at peak performance.
· If installing a new furnace, consider a high efficiency model. Check with your local gas distribution company -- you may qualify for a rebate.
· Replace the furnace air filter regularly following the manufacturer's recommendations, especially if you have pets. A dirty or clogged filter will demand more energy and slow the heating process. Make sure your furnace is properly ventilated.
· Check heating ducts for air leaks and insulate those in unheated areas.
· Make sure heat is circulating properly. Keep furniture, draperies, and rugs from obstructing registers and heat vents. Keep radiators and registers dust-free. Move chairs and beds away from exterior walls, these are usually the coldest walls in the house.
· Using a ceiling fan forces warm air down, so you can set your thermostat at a lower temperature.
· Clean the lint trap on your clothes dryer.
· Line dry clothes when possible. Use the dryer for only a few minutes to soften line-dried clothes.
· When you do use the clothes dryer, avoid over- drying clothes.
· Wash clothes in cold or warm water. Hot water is not needed to get most clothes clean. It is the detergent, not the water temperature, that cleans clothes.
· Do not open the oven door while food is cooking. You can lose up to 50 degrees in temperature and waste energy.
· Adjust the gas flame to fit your pans. The flame should never come up around the sides of a pan.
· Keep the lid on pans while cooking. Keeping lids on your pots will make the water boil faster.

PREPARING A THANKSGIVING TURKEY

How to Cook a Turkey By: Sydny Carter
Fresh or Frozen?
Before you buy the turkey, figure out your guest list. You should have 1 to 1½ pounds of turkey per person.
Your next decision will be selecting between a frozen or fresh turkey.
A fresh bird is more expensive, but will save you time and precious refrigerator space. Buy the bird the day before you wish to roast it, but remember to reserve your turkey with the butcher. Most grocers don't keep a large stock of fresh birds on hand.
You will need to plan ahead if buying a frozen bird as well: it can be catastrophic to find that the only turkey available for your intimate four-person dinner is a 26-pound glacial beast. A frozen turkey needs to be defrosted. The preferred method is to defrost it in the refrigerator. (Yes, the one filled with the rest of the holiday fare.) Allow one day per 5 pounds. A 15-pound turkey will require three days to defrost thoroughly.
An alternate method is to defrost the bird in a cold water bath. Allow 30 minutes per pound. That 15-pound turkey will require only 7½ hours to defrost using this approach. It is also possible to use a combination of these methods.
How to Thaw a Turkey
 There are two safe methods for thawing a turkey: In the refrigerator. This is the preferred method, but can be difficult to arrange with a fully stocked fridge. Clear some space and allow one day for every 5 pounds of meat: a 15-pound turkey will require three days to thaw thoroughly. Submerged in cold water. Using your sink or a bucket, keep the turkey in its original wrapper and make sure it is completely covered with cold water. You may need to cover the turkey with a plate and place some heavy cans on top of it to keep it totally submerged.It is vital for the sake of safety that you change the cold water every 30 minutes. Using this method, it will take approximately 30 minutes per pound to thaw a turkey. It is also possible to use a combination of the two methods--use the fridge for the first two days of thawing, and the sink on the day before Thanksgiving, when the refrigerator fills up with other holiday dishes.
How to Roast Your Turkey

To prepare the turkey for roasting, first remove the giblets! Not only is it disconcerting to find these paper-wrapped lumps when carving the bird, but you may also wish to use the giblets in your gravy or stuffing. Next, rinse the bird inside and out. Pat dry with paper towels.
If you are stuffing the bird, stuff it loosely, allowing about ½ to ¾ cup stuffing per pound of turkey.
Brush the skin with melted butter or oil. Tie drumsticks together with string (for stuffed birds only).
Lastly, insert a meat thermometer into the thickest part of the thigh. The thermometer should point towards the body, and should not touch the bone.
Place the bird on a rack in a roasting pan, and into a preheated 350 degree F (175 degrees C) oven. Use the following chart to estimate the time required for baking. Bake until the skin is a light golden color, and then cover loosely with a foil tent. During the last 45 minutes of baking, remove the foil tent to brown the skin. Basting is not necessary, but helps promote even browning.

The
tradition of Thanksgiving as a time to focus on God and His blessings dates
back almost four centuries in America. While such celebrations occurred at Cape
Henry Virginia as early as 1607,[1] it is from the Pilgrims that we derive the current
tradition of Thanksgiving.
The
Pilgrims set sail for America on September 6, 1620, and for two months braved
the harsh elements of a storm-tossed sea. After disembarking at Plymouth Rock,
they had a prayer service and began building hasty shelters, but unprepared for
a harsh New England winter, nearly half died before spring.[2]
Yet,
persevering in prayer, and assisted by helpful Indians,[3] they reaped a bountiful harvest the following summer.[4] The grateful Pilgrims then declared a three-day feast in
December 1621 to thank God and to celebrate with their Indian friends[5] ó Americaís first Thanksgiving Festival. This began
an annual tradition in the New England Colonies that slowly spread into other
Colonies.[6]
The
first national Thanksgiving occurred in 1789. According to the Congressional
Record for September 25 of that year,
immediately after approving the Bill of Rights:
Mr.
[Elias] Boudinot said he could not think of letting the [congressional] session
pass without offering an opportunity to all the citizens of the United States
of joining with one voice in returning to Almighty God their sincere thanks for
the many blessings He had poured down upon them. With this view, therefore, he
would move the following resolution:
ìResolved,
That a joint committee of both Houses be directed to wait upon the President of
the United States to request that he would recommend to the people of the
United States a day of public thanksgiving and prayer. . . .
Mr.
Roger Sherman justified the practice of thanksgiving, on any single event, not
only as a laudable one in itself but also as warranted by a number of
precedents in Holy Writ. . . . This example he thought worthy of a Christian
imitation on the present occasion.î[7]
The
resolution was delivered to President George Washington, who heartily concurred
with the congressional request, declaring:
Whereas
it is the duty of all nations to acknowledge the providence of Almighty God, to
obey His will, to be grateful for His benefits, and humbly to implore His
protection and favor. . . . Now, therefore, I do appoint Thursday, the 26th day
of November 1789 . . . that we may all unite to render unto Him our sincere and
humble thanks for His kind care and protection.[8]
National
Thanksgiving Proclamations occurred sporadically following this one,[9] and most official Thanksgiving observances still occurred
only at the State level. Much of the credit for the adoption of an annual
national Thanksgiving may be attributed to Mrs. Sarah Josepha Hale, the editor
of Godeyís Ladyís Book. For over twenty
years, she promoted the idea of a national Thanksgiving Day,[10] contacting President after President until Abraham Lincoln
responded in 1863 by setting aside the last Thursday of November, declaring:
We are
prone to forget the Source from which [the blessings of fruitful years and
healthful skies] come. . . . No human counsel hath devised nor hath any mortal
hand worked out these great things. They are the gracious gifts of the Most
High God. . . . I do, therefore invite my fellow-citizens in every part of the United
States . . . toÖ observe the last Thursday of November next as a day of
thanksgiving and praise to our beneficent Father. Who dwelleth in the heavens.[11]
For the
next seventy-five years, Presidents followed Lincolnís precedent, annually
declaring a national Thanksgiving Day. Then, in 1941, Congress permanently
established the fourth Thursday of each November as a national holiday.[12]
As you

gratefulness to God that has always been the spirit of this, the oldest of all
American holidays.

It's
getting to be a real problem in our world today. Innocent homeowners
call contractors looking to have work performed on their home. A
service person shows up, and the homeowner doesn't think twice about
letting that person into their home. They presume that person is
honest and coming to help them with their problem. All too often these seemingly innocent calls turn tragic.
