Hello everyone!!

Wow!!  What a summer this has been so far...   Terrible storms in the early spring, followed by this never-ending heatwave!!  It is definitely time for some "hot deals and cool cocktails"!!  All things considered, I find it hard to believe that we are actually preparing for back-to-school!!!  It actually hit me like a ton of bricks about two weeks ago.  I had one of those gut-wrenching "mommy moments"... My kids just turned 21 in July (see BLOG below!), and they are both moving into apartments at school this semester.   Suddenly, the true reality hit me -They are (gulp!!) ADULTS!!  Wow.  How blessed we are.  Really.  So we are closing yet another wonderful chapter in this incredible book called LIFE, and marching forward into the next.  Those of you who have been faithful readers for awhile might remember my "kite" poem...?  It is in my newsletter archives (July 2008) and has been my most requested post over the years.  I am sharing a link to this very special poem, that still brings tears to my eyes.  In my original post, I mentioned that the poem had been on our refrigerator for as long as I could remember.  Three years later...It's still there.

Cīroc Chic

(I have no idea hoe to pronounce it - but it sounds great!!)

 

Ingredients

  • 1 1/2 ounce(s) Cīroc Vodka
  • 1 1/2 ounce(s) pomegranate juice
  • 1 ounce(s) pineapple juice
  • 1 slice(s) pineapple, or edible flowers


 

Directions

  1. Add Cīroc Vodka, pomegranate juice, and pineapple juice.
  2. Shake with ice and strain into a prechilled martini glass.
  3. Garnish with a pineapple slice or edible flowers.

 

Popcorn granola bars 

Just in time for "Back to school" 

 

Popcorn Granola Bars

Ingredients

6

cups popped popcorn

2

cups granola

3

cups mini marshmallows

½

cup butterscotch chips

cup peanut butter

2

tablespoons butter

¼

teaspoon salt

Preparation

Step 1

In a large bowl, combine popcorn and granola (homemade granola if you have it!)

Step 2

 

In a saucepan, combine marshmallows chips, peanut butter, butter and salt

 

Step 3

 

Stir over low heat until melted and smooth

 

Step 4

 

Pour over popcorn mixture

 

Step 5

 

Stir to combine

Step 6

 

Press into a lightly buttered 9 X 13 pan, using buttered fingers to avoid having it stick to your hands

 

Step 7

 

Cut into bars

 

So you've been grilling all summer, and you're getting kind of bored with the same ole' stuff?? Step out of the box a bit, and try a little something different... like DESSERT - hot off the grill!!  A great way to support your local farmer's market, or roadside fruit stand, with all of those fresh summer peaches!!   

 

Succulent Grilled Peaches With Honey Chevre

Yield: 8

Ingredients

4

fresh peaches, halved and pits removed

6

ounces chevre goat cheese

1

tablespoon honey

2

tablespoons skim milk

8

mint leaves

 

Preparation

Step 1

Heat grill to medium. Combine cheese, honey and milk in a small bowl. Grill peaches cut side down until sugars begin to caramelize and leave grill marks. Fill each with about 1 tablespoon of cheese mixture. Top with mint leaves and serve warm.
