 Squid ink pasta with calamariOK - I'll admit that I tried to copy a favorite dish from a local restaurant on this one... but I really "upped" the bar by serving it over one of my brand new pastas - SQUID INK PASTA!!! Yes- you read that correctly! The first, and only, time that I ever had (black) squid ink pasta was in Las Vegas - and I have thought about it ever since. Talk about making a statement at your next dinner party...Wow! Truth be told - it actually tastes like normal pasta - so don't be scared off by the name. Besides - life is short... "eat black pasta" should be on your bucket list!!
Here's the "recipe"...
Put about a teaspoon of olive oil in a large saucepan along with several cloves of minced garlic. Cook for a couple of minutes over med heat but don't brown the garlic. Pour in about 3 c. of your favorite marinara sauce (I recommend the Stonewall Kitchen sauces pictured below!!) along with about 1/2 c. sliced kalamata olives, about 1/2 of a 3.5 oz jar of capers, and 1-1 1/2 lbs. raw (cleaned!)calamari **. Simmer over low heat just until calamari is done - about 10-15 minutes. Don't overcook or calamari will be tough. Top with shredded parmesan or romano cheese. Yummy!!
** As for the calamari - don't be intimidated if you have never worked with it before. You can make this dish with "tubes" only, or with tubes and tentacles. When you go to purchase this at the meat counter, you will more than likely not see "tubes", but rather the "body", which is the prime section of meat, in one piece. Simply slice that crosswise into "rings", and you are ready to roll!

Caramel Macchiato Trifle
If you were at our October 1st Thursday event, then you probably sampled this delicious dessert prepared by my "Wind & Willow" rep, Lyn. Wouldn't this be a beautiful ending to your Thanksgiving feast... (and a little secret - it's super simple to make! It just looks fancy!!) The best part is, it can be made with any of the delicious "Wind & Willow" dessert cheeseballs ($4.50). Honestly - I don't know how to squeeze more out of $3.75 than the Aspen Mulling Spices.
They are delicious hot or cold and can be mixed into cider, wine, tea or brandy. Just smelling it makes you feel warm and cozy inside! For breakfast, mix into butter or cream cheese for your breakfast muffins or bagels. Sprinkle on oatmeal, pancakes, ice cream... Substitute for the sugar & spices (cup for cup ) in your favorite muffins and baked goods. Combine with other dry ingredients to make a meat rub or add into a BBQ sauce or marinade. Oh my goodness... the possibilities are endless!!

Pink Lemonade Cupcakes
Thanks to all of you who requested last month's cupcake recipe. I made them for my friend's birthday party (Happy Birthday, again, Liz!!) and here is a pic of how mine turned out. I had to do some adjusting with the frosting recipe to get it "tart enough" for my taste.
