"Oh my, Cathy.  Your Mexican salad with the Honey-Lime dressing was a BIG hit at out last "dinner-gin game" gathering with our friends.  The next day I received a call for the recipe!  Keep up the great recipe ideas!!!  Margo"

"Hi Cathy,
I bought the black & gold martini glasses ("Chocolatini") and a chocolate martini dip mix for my sister-in-law's 40th birthday this past Saturday at Trendz.  She called me right after she finished opening her gifts and said that it was her favorite and that she absolutely loved them.  I just wanted to thank you for making me look so good!
Blessings, Laura"

Greetings!

Well - It won't take you long to figure out
that "Think Pink" is my theme this month.
Most of you. my faithful readers out there, are women - but even my cherished male newsletter friends have moms, sisters, wives, daughters... and so this touches all of our lives in some way.  Even though this month focuses specifically on breast cancer - I like to think that this month's focus makes all of us more aware of ALL types of cancer!!  It reminds us to be faithful and diligent about check-ups, screenings and prevention - as well as encouraging our loved ones to do the same.
As for the fact that everything this month  is pink...
Well that's just a wonderful bonus!!
Do you have a group of friends that you will be getting together with this month?? Cards?  Bunco?  Football :) ?  Have everyone wear pink and serve some pink "goodies".  I will give you a head start with a recipe for "Chambord Pink-Tinis" and "Pink Lemonade Cupcakes"!!  (C'mon guys - could be the best football party EVER!!!  Please send pics...)  Send people away with some sort of info - Cheat sheets for self-exams, reminders to get a mammogram (colonoscopy...prostrate screening... mole checks...)
If this all sounds a bit weird or extreme - think again.  We are talking about the people we love.  Family and friends.
Be proactive.  Check out the links below.  Do what you can.
Then eat a cupcake...

Cheers!
Cathy

The apples of autumn... in a burger??
"We're talkin' turkey" burger    (SO good!  Try them!)

2 Granny Smith apples, peeled & finely diced

2-3 green onions (green & white parts), thinly sliced

1 T. canola oil

2.5 lbs. ground turkey breast

1/4 c Stonewall Kitchen chutney**

1 t. dried thyme

Juice of 1/2 lemon

1 1/4 t. (Tabasco) chipotle pepper sauce

1-1.5 T. coarse black pepper

Optional:

1-2 lg. Vidalia or sweet onions (grilled - for topping)

Swiss cheese slices (can use baby swiss or reduced fat swiss)

Saute the apples over medium heat for a minute or so before adding the green onions.  Saute both until tender, remove from heat, and set aside to cool.

In a large mixing bowl, combine turkey with the cooled apple/onion mixture and remaining ingredients until just mixed.  Form into 8 patties - Cover and refrigerate for about 2 hours.

Grill until turkey is thorougly cooked.  We like to serve topped with grilled onions and a slice of Swiss cheese.

Homemade sweet potatoe fries and a little fresh fruit are great sides for this yummy burger!!  Put on a sweater, pour a glass of crisp Chardonnay - and enjoy dinner outside tonight!!
