Margarita Glasses

Mexican Chopped Salad with Honey-Lime Dressing
 
Salad:
2 1/2 c. chopped romaine lettuce
15.5 oz can black beans, rinsed & drained
3/4 c. chopeed seeded tomato
3/4 c. chopped peeled jicama
3/4 c. corn kernels
3/4 c. thinly sliced radishes
1 lg  avocado, diced
1 lg  red pepper, chopped
1/4 c. crumbled feta cheese
 
Honey-Lime Dressing:
1/4 c. fresh lime juice
2 Tbs. oive oil
2 Tbs. honey
2 Tbs. finely chopped fresh cilantro (or more to taste)
1 clove minced garlic
1 tsp. chopped jalepeno pepper
 
Toss all salad ingredients in a large bowl.  Mix dressing seperately; , pour over salad,  and toss again.  Season with salt and pepper to taste.
 
Serves 4

Fresh Salsa
 
2 lg. chopped tomatoes
1 med onion, finely chopped
2 cloves minced garlic
2-3 fresh jalepeno peppers, finely chopped
1 Tbs olive oil
1 Tbs lime juice
2 Tbs chopped cilantro
salt to taste
 
Combine all ingredients in a large bowl and season to taste with salt.  Refrigerate at least one hour to allow the flavors to blend.
 
(Makes approx 2 cups)

Hello everyone!!!
 
Hard to believe that we are sitting here at the back end of summer already!!   My kids are getting ready to head back to school in one short week - sophomores this year - and I am trying to figure out how to make this last week slow down, somehow...  They turned 20 this summer, but I don't think this will EVER be easy for me - no matter how old they are!!!  I miss them already and they haven't even left!
So anyway - on to this month's theme... MARGARITAS!!  Yep - We still have some summer left - so let's say Ole` and get down to business... I've got hand-painted margarita glasses,  a new Wine-A-Rita called "Senorita", cheeseballs, cocktail napkins, and a yummy new dressing/marinade from Stonewall Kitchen in Cilantro Lime... everything you need for an "end-of-summer Mexican themed hoopla of a good party" !!!   Oh ya - and let's not forget a couple of recipes!   How about some fresh homemade salsa and a Mexican chopped salad...   And, my goodness, let's not forget dessert!!  I have got a really fun recipe for Margarita cupcakes - but it was just too long to include in the newsletter!  Scroll down to the bottom of the page and hit the link to my email.  I will email you the recipe - as long as you save me a cupcake!!  (Just kidding... kinda!)  Two more quick ideas on this month's Mexican theme.   When you mix up a batch of the fresh salsa - I saw somewhere where they suggested using a sombrero to serve the chips in ... cute, huh!?  And if you're watching that waistline - I've come up with a kind of fun way to enjoy a little "Mexican summertime beverage".  I bought some of that low-cal, low-carb margarita drink mixer from "On the Border" (No alcohol), and I simply mix it in with sparkling water and ice - and I think it's quite tasty!  I use about a 2 parts sparkling water to 1 part Margarita mix.  Warning tho- this is pretty tart!  If you like it a bit sweeter, maybe mix it with diet Sprite or 7-up??  Anyway - it's definitely guilt free!
