1 : an excursion or outing with food usually provided by members of the group and eaten in the open; also : the food provided for a picnic 2 a : a pleasant or amusingly carefree experience Yes - this month's letter celebrates the wonder of picnics . First - a list of packing supplies to get you organized. Then a delicious drink recipe that you can make ahead & freeze; which serves double duty - keeping perishables cold, and then thaws out enough to drink! Set the mood with some fun summer tunes - see below for a great CD suggestion - and don't forget a portable CD player and fresh batteries! Finally - some easy, but delicious, suggestions for picnic munchies... Try to find a place in the shade, and remember to pack hot/warm foods seperate from cold - which should be transported on ice. So there we are - all the makings of a perfect picnic - and just in time for Father's Day!! In honor of all of those Fathers out there - I will end with a couple of cute quotes - just for "Dad"...

| Picnic supplies |
Besides food and drinks, you will need some basic supplies to help you create a perfect picnic experience. Some picnic baskets come with items such as plates and utensils, but you may need to add them to others. - Large blanket If you plan to eat on the grass, bring a blanket large enough for everyone to have a place to sit and still have room to set out all the food.
- Tablecloth A plastic or oilcloth covering makes eating on picnic table less messy.
- Insulated Thermos Use a thermos to keep soups warm or salads cool.
- Unbreakable dinnerware Melamine plates and cups hold up well to traveling and eating outdoors.
- Utensils Bring real or plastic utensils if needed for salads and desserts. Don't forget serving spoons and knives.
- Napkins Cloth napkins are a nice touch even for casual outings, and they are less likely to blow away in the wind.
- Cleaning supplies Paper towels and trash bags make clean up quick and easy.

| "Daiquirita" | |
1 oz white rum
1 oz simple syrup
3/4 oz white tequila
3/4 oz triple sec
1/2 oz lemon juice
1/2 oz lime juice
lime twist, for garnish
Combine the ingredients in a cocktail shaker filled with 3/4 cup ice and shake vigorously. Pour into a glass. If serving frozen, combine the ingredients in a blender with 3/4 cup crushed ice and blend until smooth. Pour into a glass. You can coat the rim of the glass in a sugar-salt mixture. Garnish with a lime twist.
"Strawberry Daiquirita"
Add 1/4 cup sweetened strawberries to the recipe above for a frosty berry version, which must be served frozen. Garnish with a fresh strawberry. |

| Easy Picnic Food!! |  "Pesto Chicken Rolls"
Season & grill chicken cutlets. Brush lavash or any other wrap-type bread with pesto; layer with the chicken, sun-dried tomatoes & arugula; roll up & cut on the bias.
"Roast Beef & Blue" Start with whole grain rolls. Smear blue cheese on one side and prepared horseradish on the other. Add red onion and thin-sliced roast beef. Bring lettuce & tomatoe on the side. Potato chips are mandatory. Cook fusilli or other cut pasta; rinse in cool water, but don't bother to chill. Combine with seeded tomatoes, cubed fresh mozzarella, chopped basil, olive oil, salt & pepper. (Good with olives, too!) Puree roasted red peppers with feta, marjoram or oregano, & parsley, olive oil & garlic. Serve as a dip.
"Cold Peanut Noodles"
Cook Chinese egg noodles or regular spaghetti. Drain & rinse. Toss with sesame oil, peanut butter (or tahini), sugar, soy sauce, ginger, vinegar, black pepper & a sprinkle of red pepper flakes. Pack shredded seeded cucumber, chopped scallions & cooked shrimp (optional) seperately.
Marinate firm goat or feta cheese in olive oil with rosemary, garlic, lemon zest, red & black pepper. |
