Greetings!
 
First off - a very Happy New Year to all of you, my wonderful friends/customers/new contacts/future customers...  You are all so wonderful and I never get tired of bragging about how wonderful my Creations customers are!!  Thank you for yet another wonderful year and an outstanding 2009 holiday season!  I am absolutely in SHOCK that 2010 is actually here!!  Are you feeling it too?  Goodness gracious - Time sure flies!! 
 
Speaking of time flying by - I got an email from a dear friend, Laura (Rogers) Viets, this week.  She was my best friend from childhood, from 6th grade on, and we have so many great memories...!!  We both had an early "entrepreneurial spirit", and started selling Avon when we were too young to get a job at "the mall".  Since we weren't old enough to drive, one of our moms had to drop us off at our monthly meetings with all of the "old ladies" (probably our current age, or younger...)  We went door-to-door, dropping off samples and booklets, following up on leads...  Yes - it was life before the Internet...! 
Now fast forward "30-something" years - and allow me the privilege of introducing a returning Avon superstar, my dear friend... Laura Viets!!  Although she lives in St. Louis, MO - she is available to you anywhere through the magic of the Internet!!  Simply click here - Your Avon Representative - Laura Viets and you are ready to roll!  Here's to a more beautiful you in 2010!!

 I just wanted to send out a great big "thank you" to all of the wonderful gals at Trendz for all of their hard work, long hours,  and constant energy throughout this first holiday season at Trendz!  You guys are absolutely  incredible and I feel so blessed to be part of such a wonderful team!!!
 
And now - moving forward to 2010...

Cheese Fondue
Cheese fondue originated in the alps at the end of winter when food supplies were low.  Farmers would use what they had on hand to feed their families.  Cheese, bread, and wine were usually all that was available - so they threw the wine and cheese in a pot and dipped their bread in there and waited for Spring. (Not a bad plan if you ask me!) 
 
A few fondue "tips"...
  • If the fondue is too hard, add more wine.
  • If the fondue is too soft, add more cheese.
  • Have your guests stir in a 'figure 8' pattern each time they 'dip'
  • The traditional drink for fondue is hot tea or the wine that you used to cook with. (When in doubt, Merlot is great with cheese fondue!)
  • If the item that you're dipping comes off of your fork - KISS THE COOK!
Ingredients:
1 garlic clove, halved crosswise
1 1/2 cups dry white wine
1 T. kirsch
1/2 lb. Emmental cheese, coarsly grated (2 cups)
1/2 lb. Gruyere cheese, coarsly grated (2 cups)
 
Preparation:
Rub inside of a 4-quart heavy pot with cut sides of garlic.  Add wine to pot and bring just to a simmer over moderate heat.
Stir together cornstarch and kirsch in a cup.
Gradually add cheese to pot and cook, stirring constantly in a zig-zag pattern (not a circular motion) to prevent cheese from balling up, until cheese is just melted and creamy (Do not let boil!).  Stir cornstarch mixture again and stir into fondue.  Bring fondue to a simmer and cook, stirring until thickened, 5-8 minutes.
Transfer to a fondue pot set over a flame.  Serve with bread, apples, vegetables, potatoes, etc. for dipping.
 
My husband and I agree that the very best wine tastings that we have ever done are those that are paired with foods that compliment the wine.  I know this article is long, but I found it on the internet and I really liked it.  Informative - yet simple and logical... 
 
Ten rules-of-thumb for food and wine pairing

  1. If you are taking wine as a gift to a dinner party, don't worry about matching the wine to the food unless you have been requested to do so and have enough information about what is being served to make an informed choice. Just bring a good wine. Match quality of food and wine. A grand dinner party with multiple courses of elaborately prepared dishes deserves a better wine than hamburgers on the grill with chips in a bag.
  2. When you're serving more than one wine at a meal, it's customary to serve lighter wines before full-bodied ones. Dry wines should be served before sweet wines unless a sweet flavored dish is served early in the meal. In that case match the sweet dish with a similarly sweet wine. Lower alcohol wines should be served before higher alcohol wines.
  3. Balance flavor intensity. Pair light-bodied wines with lighter food and fuller-bodied wines with heartier, more flavorful, richer and fattier dishes.
  4. Consider how the food is prepared. Delicately flavored foods - poached or steamed - pair best with delicate wines. It's easier to pair wines with more flavorfully prepared food - braised, grilled, roasted or sautéed. Pair the wine with the sauce, seasoning or dominant flavor of the dish.
  5. Match flavors. An earthy Pinot Noir goes well with mushroom soup and the grapefruit/citrus taste of Sauvignon Blancs goes with fish for the same reasons that lemon does.
  6. Balance sweetness. But, beware of pairing a wine with food that is sweeter than the wine, although I do like chocolate with Cabernet Sauvignon. I also like chocolate with good dark beer. Come to think of it, I like chocolate with just about anything.
  7. Consider pairing opposites. Very hot or spicy foods - some Thai dishes, or hot curries for example - often work best with sweet desert wines. Opposing flavors can play off each other, creating new flavor sensations and cleansing the palate.
  8. Match by geographic location. Regional foods and wines, having developed together over time, often have a natural affinity for each other.
  9. Pair wine and cheese. In some European countries the best wine is reserved for the cheese course. Red wines go well with mild to sharp cheese. Pungent and intensely flavored cheese is better with a sweeter wine. Goat Cheeses pair well with dry white wine, while milder cheeses pair best with fruiter red wine. Soft cheese like Camembert and Brie, if not over ripe, pair well with just about any red wine including Cabernet, Zinfandel and Red Burgundy.
  10. Adjust food flavor to better pair with the wine. Sweetness in a dish will increase the awareness of bitterness and astringency in wine, making it appear drier, stronger and less fruity. High amounts of acidity in food will decrease awareness of sourness in wine and making it taste richer and mellower - sweet wine will taste sweeter.

    Bitter flavors in food increase the perception of bitter, tannic elements in wine. Sourness and salt in food suppress bitter taste in wine. Salt in food can tone down the bitterness and astringency of wine and may make sweet wines taste sweeter.

Ingredients:
  • 2oz white creme de menthe
  • hot chocolate
  • 1/2 oz green creme de menthe
  • whipped cream
 Preparation:
  1. Pour white creme de menthe and hot chocolate into an Irish coffee glass
  2. Top with whipped cream
  3. Drizzle the green creme de menthe on top

"Frostini"
Ingredients:
 
  •  1 part Starbucks Cream Liqueur
  • 1 part Starbucks Coffee Liqueur
  • 1/4 part DeKuyper Peppermint Schnapps
  • Fresh mint for garnish
 
Preparation:
 
  1. Pour the ingredients into a cocktail shaker with ice
  2. Shake well
  3. Strain into a frozen martini glass
  4. Garnish with a sprig of mint
 (And, "No" - I did not get a kickback from Starbucks for printing this - but I think they should at least give me a free coffee - Don't you?!!)
