Greetings!
I find May to be a glorious month...
My very favorite season - Spring - is here (Yeah!), and it's the one month that honors the two days of the whole year that belong just to me...my birthday and Mother's Day. This year, however, May is going to be tough for me. Both of my kids are high school seniors, which means they are graduating this month. It's not that they aren't ready. They are. And I'm so very thankful for that. I am also incredibly thankful for the gift of being their mom for (almost) 19 years. For me - It has been the very best "job" in the whole world.
Last summer they turned 18, and I included a very special poem in my newsletter. Months later, I still had requests for copies. I have decided to share it with you one more time - and I dedicate it to mother's near and far...
Children Are Like Kites
I see children as kites.
You spend a lifetime trying to get them off the ground.
You run with them until you are breathless.
They crash.
They hit the rooftop.
You patch and you comfort; You adjust and you teach.
Finally they are airborne...
They need more string and you keep letting it out.
But with each twist of the ball of twine,
there is a sadness that goes with the joy.
The kite becomes more distant,
and you know that it won't be long until
that string will snap
and the lifeline that holds you together will no longer be the same.
A child, as a kite, must be prepared to soar,
as they are meant to soar,
free and alone , to the greatest extent possible.
Then, and only then,
can we collectively say that we have done our job.

Rainbow Martini
2 oz Grey Goose Orange
2 oz Orange Juice
1 oz Cranberry Juice
1 oz Blue Curacao
Shake Grey Goose Orange and OJ and pour into a martini glass. Spoon cranberry juice (or grenadine) to create a second layer. Spoon Blue Curacao onto top. Garnish with a cherry.

I have to tell you that these are quite yummy! I made them when I got together with a group of girlfriends last fall, and then again about a month ago for a bridal shower that we had for my niece. Everybody loved them!! Great "girlie food" - especially when served with a Mimosa...!
Chopped Ham Tea Sandwiches
Filling ingredients:
2 c. diced cooked ham
2 hard boiled eggs
3 T. green onions
3/4 c. shredded sharp cheddar cheese
1/2 c. unsalted pecans
2/3 c. dairy sour cream (I used lite)
Finely chop ham, hard boiled egg and onions and place in mixing bowl. Chop pecans (as small as you can) and add to mixture along with cheddar cheese. Add sour cream and mix together until well blended. Refrigerate for 2-3 hours before serving to allow flavors to come together. When ready to serve, let mixture sit at room temperature for 30 minutes or so, as it will spread much easier. If you are in a hurry, place the bowl in the microwave for 20-30 seconds - just long enough to soften the mixture, but make sure that it doesn't get too warm.
(Makes approximately 3-4 cups sandwich spread)
To make tea sandwiches:
Take 20 slices of very thin white or wheat bread and cut the edges off of the bread. Spread half the slices with the filling and top with 2nd slice of bread, making 10 sandwiches. Cut in half diagonally to make 20 sandwiches, or in half again to make 40 little triangles. |
| Here's a little "springtime sparkle" to enjoy with your tea sandwiches...
Shake well with cracked ice:
Juice of 1/2 lemon
1 t. raspberry syrup
1 t. grenadine
Strain into a champagne flute, fill with chilled sparkling nonalcoholic cider, and garnish with a cherry.
