 Greetings!
Happy Summer to all of you out there...!!
It's a big month for us here at the Toth house - Our twins (boy/girl) are turning 18!!  WOW...  Don't even ask me where the time went - I don't have a clue!  They will be seniors next year, and then they are "off and running..." 
In celebration of the incredible gift of the past 18 years (times two!), I would like to share a very special poem that has been on our refrigerator for as long as I can remember...
 
Children Are Like Kites
 
I see children as kites.
You spend a lifetime trying to get them off the ground.
You run with them until you are breathless.
They crash.
They hit the rooftop.
You patch and you comfort; You adjust and you teach.
Finally they are airborne...
They need more string and you keep letting it out.
But with each twist of the ball of twine,
there is a sadness that goes with the joy.
The kite becomes more distant,
and you know that it won't be long until
that string will snap and the lifeline that holds you together will no longer be the same.
A child, as a kite, must be prepared to soar, as they are meant to soar, free and alone, to the greatest extent possible.
Then, and only then, can we collectively say that we have done our job.

An outdoor party can be a charming affair, especially if you work hard to create an intimate atmosphere.  Designer Kerry Joyce shares the following tips for lighting your evening patio party: 

  • Turn off/Disconnect any motion-sensitive lights.  Nothing spoils the mood like a sudden glare of blinding floodlight.
  • If you string tiny lights in the trees, make sure you add a cord dimmer. (Hardware stores sell them for use with table lamps)  Some of the new lights are extremely bright, which can look garish instead of romantic.
  • Floating candles look lovely in a pond or swimming pool.  Some floating solar lanterns, made of molded polyethylene, stay charged for eight hours.
  • A whimsical candle chandelier strung from a tree over your dining area can be magical.

"Hi Cathy.  I love getting your email.  Am anxious to try the Baked Brie.  Several months ago you shared a Pink Martini recipe with me.  You will be excited to know that my son, who works in Washington, DC as an event planner at the John F. Kennedy Center for the Performing Arts, used that recipe for an event for over 300 people.  It was a big hit.  Thanks for sharing!"

Well, Mary Lynn - after that nice email, I think it's only fair that we share the recipe with everyone...
 
The Pink Martini
 
1  1/4 oz greygoose vodka 
1/4 oz lime juice
1/4 oz triple sec
1/4 oz cranberry juice
Shake with crushed ice and strain into a martini glass.  Garnish with raspberries or lime.
Ok - It's summer and it's hot.  You want to have people over, but you don't want to cook.  The supermarket deli can be a real lifesaver.  In an old newspaper article, I found a sampling of appetizers that you can throw together lickety-split with a little help from the deli:
  • Wrap prosciutto slices around fresh fig halves or chunks of melon.
  • Sprinkle olives with chopped fresh thyme or rosemary and a teaspoon of grated orange zest.
  • Spread deli meats with a thin layer of cream cheese, then roll them up around lightly steamed asparagus spears or sweet baby gherkins.  Secure with toothpicks.
  • Surround a hunk of good blue cheese with red and green grapes, and mounds of toasted pecans or walnuts.
  • Spear marinated mushrooms and fresh grape tomatoes on toothpicks to make mini kebobs.
Pomegranate Margarita
 
2 oz tequila
2 oz pomegranate juice
1 oz triple sec
1/2 oz lime juice
1/2 oz simple syrup (see below)*
 
Combine the ingredients in a cocktail shaker filled with 3/4 cup ice and shake vigorously.  Pour into a glass. 
 
*Simple Syrup: 
In small bowl or glass, combine 1/2 cup white sugar and 1/2 cup hot water.  Stir until completely dissolved.  Let cool completely before using.
(Make in advance & store in the refrigerator, covered, for up to 5 days)
 Mojito
(A great, refreshing summer drink -
 especially if you have fresh mint in your garden!)
 
1/2 lime
1 teaspoon confectioners sugar
6-7 mint leaves
1 large handful crushed ice
4 tablespoons white rum
1 dash club soda or mineral water
 
Wash and halve the lime, then squeeze out the juice.  Cut both halves into wedges.  Stir the sugar and lime juice together in a highball glass.  Add the mint leaves and the lime wedges, muddling * all together .  Fill the glass with crushed ice, pour the rum over the ice and stir gently.  Top with the club soda or mineral water.
 
 * Muddling is the term used for the process by which a fruit or herb is crushed to release it's flavors.  The cocktail maker uses a blunt ended tool, similar to a pestle, called a muddler.   Pick one up at most any liquor store,  or simply use the back of a spoon to crush everything together.
Watermelon Lemonade
(non-alcoholic) 
 
8 cups seeded watermelon cut into 1-inch chunks 
1 cup hulled and quartered fresh strawberries
1 cup granulated sugar 
1/2 cup freshly squeezed lemon juice (about 2-3 lemons)
2 cups water (approximately)
Thin watermelon wedges with the rind (optional)

1.  In a food processor fitted with a steel blade, pulse the watermelon, strawberries, and sugar until blended and smooth.

2.  Strain through a fine-mesh strainer into a 2-quart container, pushing down the solids to get all the juice.  Add the lemon juice and enough water to make 1  1/2 quarts.
 
3.  Chill until very cold.  Serve over ice with a wedge of watermelon, if desired.
