May - What a glorious month!!
In honor of Mother's Day, I would like to dedicate this newsletter to all of you women out there - moms, daughters, sisters, grandmothers, mother-in-laws, sister-in-laws, aunts, friends...  Honestly - What would we do without the women in our lives!!  I cannot even imagine...

Ahhh; the indulgence of a chocolate martini - served ice cold in an elegant martini glass, bathed in warm copper and chocolate brown...

"There are 4 basic food groups:  dark chocolate, milk chocolate, white chocolate, and chocolate truffles".   -Unknown 
 
Trio of Chocolate Truffles
 
2/3 cup whipping cream
1 12-oz package (about 2 cups) semisweet chocolate chips
2 teaspoons vanilla extract
 
1/4 cup unsweetened cocoa powder
3/4 cup (about 2 1/2 oz) sweetened shredded coconut, toasted
1/2 cup (about 2 oz) finely chopped pistachios
 
Bring cream to boil in a heavy medium saucepan.  Remove from heat.  Add chocolate; whisk until melted and smooth.  Whisk in vanilla.  Pour into medium bowl.  Cover; chill until firm, about 3 hours.  Line baking sheet with waxed paper.  Drop mixture by rounded teaspoonfuls onto prepared baking sheet.  Freeze until firm; about 45 minutes.
Place cocoa, coconut and nuts in seperate bowls.  Roll truffles between hands into rounds.  Roll 1/3 of truffles in each topping.
**  Optional:  Flavor the chocolate mixture with some grated orange peel or espresso powder, if you like.
 
Perfect with a glass of Champagne!!
 

"WORDS OF WINE WISDOM"

Many customs Have accompanied wine drinking through the years.  None of them are meant to be intimidating or stuffy.  They are just practices intended to enhance the enjoyment of wine.  You will find these tips, and many more, in a publication, Wine 101.
  • "White wine with fish,and red wine with meat" is more customary than culinary.
  • Red wines are served at room temperature, while white wines, roses, and champagnes are served chilled.
  • The stronger the food, the stronger the wine.  The lighter the food, the lighter the wine.
  • Wine loves air, which revives it's sleeping flavors.  It is recommended to open the bottle about an hour before consumption and let the wine "breathe".  This ages it a year or so, and allows it's flavors to mellow.
  • Red wine corks are sniffed to make sure the wine has not spoiled, which gives the cork an unpleasant smell.  It is not necessary to smell white and rose wine corks since the bottle was refrigerated and the cork will not smell.

1 oz PAMA Pomegranate Liqueur
2 oz vodka
1 oz pink grapefruit juice
lemon wedge
coarse sugar for rimming
 
Rub the wedge of lemon around the rim of a martini glass and dip the glass into a plate of rimming sugar.  Pour the remaining ingredients into a cocktail shaker with ice.  Shake and strain into martini glass.

Went to a "Mother's Club" meeting at my daughter's school the other day and had a pleasant surprise...  There on the refreshment table, being used as part of the fresh fruit display, was one of my "Swizzle Martini" glasses!  Thanks, Nancy!!
