Edible Aphrodisiacs
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Why is that we sometimes crave chocolate when we really want love? Is it just because it tastes so good, or is there actually a physiological reason?
Chocolate is the love drug. All chocolate comes from the cacao bean (pronounced ka-kow), the seed of the cacao fruit.
Cacao contains the compound phenylethylamine (PEA) dubbed the love chemical. While there is no hard scientific evidence to prove this, PEA seems to create feelings of excitement, attraction and euphoria. When we fall in love our PEA levels increase. Researchers from the Department of Food Chemistry reported that PEA is also noticeably abundant in the brains of happy people and elevated PEA levels occur when we are captivated by an attractive person.
They also said that if we believe that things have gone wrong in our life, especially in our love life, PEA levels drops. Chocolate seems to keep our PEA levels high no matter what's happening in our love life. Dark chocolate (over 70%) is loaded with PEA. This is one of the most popular theories about why we crave chocolate when we want love.
What to look for on the ingredient list: High Cacao content - 70% and up Low sugar - try and find chocolate with less than 10g of sugar per serving Cacao butter Cacao Liquor Soy Lecithin Vanilla - optional AND THAT"S IT!
Why is chocolate considered to be a Superfood? The cacao bean is categorized as a
superfood due to its super high antioxidant level. Cacao has more
antioxidant flavonoids than any food tested so far, including
blueberries, red wine, and black and green teas. In fact, it has up to
four times the quantity of antioxidants found in green tea. Cacao beans are also rich in a number of essential minerals, including magnesium, sulfur, calcium, iron, zinc, copper, potassium and manganese. Important note - To fully benefit from chocolate's wide array of nutrients, eat chocolate that is as close to its natural state as possible. Whole cacao beans and nibs are best. You lose many of the health benefits when you eat commercially produced chocolate.
FUN FACT: 1% of the American diet consists of chocolate.

Recipes of the Month: Chocolate Delights
Dark Chocolate and Date Truffles
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Ingredients for 24 truffles:
1 bag or bar of dark chocolate (12oz) 1 2/3 cups raw cashews 8 oz dates, finely chopped 1/4 tsp sea salt Zest of 1/2 of an orange
Melt chocolate in double boiler until just melted. Meanwhile, blend 2/3 cups cashews with 2/3 cups water in blender on high for 30 seconds. Chop remaining cashews and set aside. Fold together melted chocolate, cashew mixture, dates, sea salt and orange zest. Refrigerate until firm, appr. 45 minutes. Roll 3/4 inch balls and then in chopped cashews. Refrigerate until ready to serve.
Heart Healthy Chocolate Chip Cookies
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Ingredients for 30 cookies:
2 cups walnuts 3 Tbs canola oil 1 cup light brown sugar (replace with date sugar) 2 tsp vanilla extract 1 1/2 cups oat flour 1 tsp baking soda 1 tsp salt 1/4 tsp ground cinnamon 2 cups rolled oats 1 3.5oz bars bittersweet vegan chocolate, chopped, or 1 1/2 cups vegan chocolate chips (12 oz)
Preheat oven to 350F. Coat 2 baking sheets with cooking spray. Blend walnuts in food processor 30 seconds or until ground into a fine meal. Add canola oil and blend 2 to 3 minutes more or until mixture has consistency of natural peanut butter, scraping down the sides of food processor occasionally. Transfer to bowl. Whisk together brown sugar and 1/2 cup water in small saucepan and bring mixture to a boil. Pour brown sugar mixture over ground walnut butter, add vanilla extract and stir until no lumps remain. Whisk together oat flour, baking soda, salt and cinnamon in separate bowl. Stir oat flour mixture into walnut mixture. Cool 10 minutes. Fold in oats then chocolate chips. Shape cookie dough into 2 inch balls and place 2 inches apart on prepared baking sheets. Flatten cookies with bottom of drinking glass dipped in water. Bake 8 to 10 minutes or until cookies begin to brown and tops look dry.
Raw Cacao Nuggets ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Ingredients:
1 cup raw cacao 1 cup almonds 1 cup dates 3 tbsp carab powder ½ cup coconut shavings
Take your cacao, almonds, dates, and carab powder and throw them into a food processor. Process the ingredients until sticky, which should only take about 3-5 minutes. Roll them into small balls roughly the size of quarters then roll the balls in the coconut shavings, and viola! You have a healthy, energy-dense, delicious raw ball of pure delight.
