The Gambia Hospital Project

In late 2009, while working out at 24-Hour Fitness, I had the pleasure of meeting Baboucarr Jallow, an outstanding and highly respected referee for MLS (Major League Soccer).  The two of us got to talking about soccer and our lives in general, and when I asked Baboucarr where he was from originally before relocating to the Federal Way, Washington area, he replied, "I am from The Gambia."  With his really nifty accent, that sounded very exotic to me. 

The GambiaI spent some time researching his home country after that and discovered how The Gambia's medical system could really use some assistance given its high levels of diabetes, HIV, malaria and other illnesses.  Public expenditure was at 1.8 % of the GDP in 2004, whereas private expenditure was at 5.0 %. Infant mortality was at 97 per 1,000 births in 2005. There were 11 physicians per 100,000 persons in the early 2000s. Life expectancy at birth was at 59.9 years for females and 57.7 years for males in 2005.  According to the World Health Organization, in 2005 an estimated 78.3% of Gambia's girls and women have suffered female genital mutilation.

It was at that moment the idea struck me how he and I could make a difference if we only put our minds together and formulated a plan.

Since our initial discussion about what we could set as a goal, we have met some very interesting people.  Through my friendships with people, we have involved with this project, among others:  David Corner from "The Gathering Place," helping with medical supplies and equipment.  David is a wonderful person who has helped out other African nations with medical relief activities over the years.  Also, another friend of mine has been rounding up medical supplies from local hospitals as part of this project as well.  Antonio Sanchez, currently employed as Senior Analyst and Coordinator of Economic Development and International Relations with the office of Lieutenant Governor Brad Owen, has been invaluable with our international communication needs.  Sanna Nyassi, from The Gambia and former Seattle Sounder soccer great, was asked and agreed to be our spokesperson and carry our message to The Gambia's government.

Sanna came back from The Gambia with a list of needed medical supplies and David Corner has matched that list with available supplies on hand...it was a 100% match!!   

However, we still have another difficult part of this project to overcome, raising sufficient capital to ensure proper and secure delivery of the medical supplies and equipment.  If you are interested in helping our project along and would like to know what you can do to help this worthy project make it to the finish line, please contact either Baboucarr or me by dialing (253) 661-2711 and we will be more than happy to get in touch with you.

What Is Yelp?

To quote the Yelp website "Yelp allows consumers to share the experiences they've had with local businesses and lets business owners share information about their business with their customers. Simply put, it's word of mouth-- amplified."


Yelp allows businesses to create a listing for their company that can be searched by potential customers to see what others have had to say about the goods or services offered.  It can also be accessed by current customers to leave feedback or reviews.  This is a great way to showcase what you do and who you are.  Plus it's a great tool to see what your customers think of you so that you know what you're doing right and what you might want to improve upon.  Click here for the yelp business page.


Yelp has also created a great phone app to compliment their web service that can show potential customers where your business is and give information while on the go.  Click here for the yelp mobile app page.  I love this app.

Watergate Salad

 

This month I am going to do this section a little bit differently.  Instead of the ususal transcription stuff I am going to give you one of my favorite recipes.  I know that you were all looking forward to the usual blah blah blah inaudible, blah blah blah speak clearly, blah blah blah recordings sometimes are iffy, blah blah blah.  Don't worry, that will be back next month.     

 

We have all heard the name and we have all seen this family favorite dish at picnics and potlucks but what is a Watergate salad? 

 

PuddingIn 1975 the Kraft Food Company introduced its new instant pistachio pudding to the public.  Along with the new product release they came up with a salad/dessert recipe for Pistachio Pineapple Delight.  Homemakers would call the company up and ask for the recipe for their Watergate Salad.  It did not take Kraft long to figure out what they were asking for.  Other names this salad is known by include:  Pistachio salad, Hawaiian Surprise, Pistachio Delight, Picnic Passion and Green Stuff.

 

How did the name change to Watergate Salad?  The rumor is that a food writer in Chicago dubbed the pistachio pudding recipe "Watergate Salad" to generate more interest in the salad when she printed it in her column.  The new name stuck since the Watergate scandal was big news at the time culminating with the resignation of President Nixon in 1974.  However, food historians have never been able to find a recipe listing or food writer to claim the naming of the pudding recipe.

 

Watergate SaladWatergate Salad Recipe

 

1 - 3.5 oz. pkg. instant pistachio pudding

1 - 8 oz. can crushed pineapple, drained

2/3 c. chopped pecans

1 1/3 c. miniature marshmallows

1 - 8 oz. container non-dairy whipped topping

 

Mix the pineapple and pudding mix in a bowl.  Fold in the rest of the ingredients until everything is incorporated.  Do not use an electric mixer just fold with a spoon or spatula.

 

To double the recipe use 2 - 3.5 oz. packages of instant pudding, 1 - 20 oz. can crushed pineapple, 3 cups miniature marshmallows, 1 - 12 oz. tub cool whip and 1 cup chopped pecans.

 

This recipe is extremely versatile.  You can add other ingredients such as coconut; other sliced fruit like sliced bananas, canned fruit cocktail, mandarin orange slices, cottage cheese, whatever you wish to ask.

 

 

Lastly, for the diabetics in your life this salad/dessert can be made sugar free.  Use sugar free pistachio pudding instead of regular, use canned fruit without added sugar and I have seen sugar free cool whip on the market. 

 

Make this salad for your next office party, picnic, or holiday.  It can be used as a dessert or a side dish.  I used it, as a side dish for Christmas and it was a big hit.  Enjoy!!!
