Greetings!

Travel forces us to learn about other cultures, take on new challenges, and see ourselves and our own culture more clearly. When we go abroad, we embrace opportunities to ask questions and explore with an open mind. Because we approach the experience so openly, going abroad has the potential to have a deep impact on our lives.

Being a part of FIUTS is a wonderful way to be an "armchair traveller" and meet others from around the world without leaving home.

If you are a student, participate in FIUTS events and activities to make friends from around the globe while exploring the local community.

If you are a community member or FIUTS Alumni, consider attending CulturalFest, one of our many community events, hosting a student in your home, or joining FIUTS for Wednesday Lunch or the International Book Club.

By connecting people from diverse corners of our world for friendship and cultural exchange, FIUTS offers a special way to explore the globe without going anywhere. I hope to see all of you at a FIUTS event soon.

Do you have an extra seat at your thanksgiving table? Consider inviting an international student (or two!) to join your family for dinner. Sharing the holiday with an international visitor is a special way to celebrate, and provides a wonderful opportunity for both local families and students to learn about anothers' countries and traditions.

Students who want to join a family for the holiday are invited to sign up in the FIUTS office before November 16, and to bring a traditional dish from their country to share. Once matched, students and families can coordinate transportation and other details.

Families who wish to host students should email or call the FIUTS office at (206) 543-0735.

Charlotte Utting
In Memory of FIUTS Host Charlotte Utting

FIUTS has learned with great sadness that host Charlotte Utting passed away October 7. Charlotte will be remembered as an adventurous world traveller, dedicated volunteer, and a champion of disadvantaged people around the world.

Born in Germany, Charlotte spent much of her life abroad. She grew up in China and Canada, worked at the University of Washington Philosophy and English Departments, and served two terms in the US Peace Corps after raising her two sons. She was a dedicated FIUTS host and friendship connection to African students and scholars for more than ten years.
kabob
Try this fabulous dish from the upcoming edition of the FIUTS Cookbook! Published intermittently for more than 30 years, the FIUTS cookbook featured recipes from around the world submitted by students, alumni, and hosts.

If you would like to submit a recipe for the 2006/2007 edition of the cookbook, please send it by email to erin@fiuts.org or by mail to: FIUTS Box 352233, University of Washington Seattle, WA 98195

Here's a recipe submitted by Lissy Rabusseau, a visiting graduate student from Germany.

Mediterranean Chicken Shish Kebab with Rice and Tzatziki

Ingredients:
2 medium size chicken breasts
1 pound cherry tomatoes
½ pound fresh mozzarella cheese
Olive oil
1/2 lemon
Fresh basil leaves
1 cucumber
2 pounds plain yoghurt
1 medium size onion
3 cups of white rice
Salt, pepper, 2 tbs dry Italian Herbs (Thyme, Basil, Oregano, Rosemary)
Lettuce for decoration

Tzatziki (10 minutes):
Peel the cucumber and grate, then lightly salt them. Let them sit for 10 minutes, then drain. Add the medium sized onion, chopped into very small pieces. Add the yoghurt, season with salt and pepper.

Rice (20 minutes):
In a large pot bring 3 cups of rice and 9 cups of salted water to boil. Cover and let cook on low heat until all the water is absorbed by the rice. (Approx. 20 minutes)

Shish Kebab (20 minutes):
Cut up Chicken breast into 1 inch chunks. Fry Chicken breast in olive Oil until tender and braised to a golden-brown colour. Sprinkle the lemon juice over the chicken. Add Salt, Pepper and the dry Italian Herbs.

Cut mozzarella into pieces about half an inch thick and a little more than one inch in diameter.

Now the fried and seasoned chicken chunks need to be arranged on shish kebab sticks together with the cherry tomatoes, the mozzarella cheese pieces and basil leaves. It is fun, but don?t burn yourself because the chicken is still warm.

To serve, decorate the outside of the plate with a few leaves of lettuce, then place rice and Tzatziki on the plate. Top with the Shish kebabs. Makes four servings.

Guten Apettit.
