A study published in the December 2003 Journal of Clinical Endocrinology and Metabolism found that drinking sufficient amounts of water may actually increase the metabolic rate, meaning the rate at which you burn calories. | Minty Summer Squash |

This recipe is superb with fresh mint, so make it in the summer when fresh mint is abundant.
2 summer squash
1/2 teaspoon salt
1 tablespoon extra virgin olive oil
2 cloves garlic, chopped
2 tablespoons fresh mint, minced
Freshly ground black pepper to taste
1. Cut off the bottoms and stems of the squash. Cut squash lengthwise into small pieces, about 1/8-inch wide.
2. Sprinkle squash with salt and let stand for 15 minutes.
3. Gently squeeze the squash to release excess water.
4. In a medium saute pan, add the olive oil and garlic and saute for about 1 minute.
5. Add mint and the drained squash and cook for another minute. Serve immediately.
