| Easy Summer Recipe |
|
|
Two Tomato Salad
This simple salad is best in the summer when tomatoes are at their peak. Sundrop tomatoes taste like candy and add a wonderful element to this recipe if you can find them. To make it vegan, leave out the mozzarella.
1 cup fresh basil leaves
2 tablesspoons extra virgin olive oil
1 clove garlic
Pinch of sea salt
1/4 cup pine nuts
Salad Ingredients:
2 cups of lettuce leaves, torn
1/2 cup chopped sundrop tomatoes
1/2 cup chopped cherry tomatoes
1/2 cup chopped cucumbers
1 cup fresh mozzarella cut into cubes (optional)
1. In a blender combine the dressing ingredients. Blend for about 45 seconds.
2. Tear lettuce leaves into bits size pieces and arrange on the serving plate. Add the tomatoes and cucumbers and fresh mozzarella, if using, in the center of the plate.
3. Pour the dressing over the salad and serve.
