One of our customers at Piedmont Park brought this recipe to us.
Summer Squash Fritters with Basil Pesto
1 medium onion
1 lb squash or zucchini, grated
3 Tbsp all-purpose flour
3 eggs
3 Tbsp olive oil
2 Tbsp Chives finely sliced
6 oz Parmesan Cheese
Fresh ground black pepper
fritters:
In a large pan, Sweat the onion over low heat until soft and slightly caramalized. Add the squash and continue to cook until softened.
In a bowl, beat the eggs and flour until smooh. Add a few grinds of black pepper. Add the chives and the cheese and mix well. Fold in the cooked onions and squash.
Fill the bottom of the pan with olive oil and use a ladle to drop the fritters into the oil. Fry until golden on both sides. Drain on paper towels.
sauce:
1 quart basil leaves
2 garlic cloves, crushed
grated peel of one lemon, yellow part only
juice of one lemon, to taste
1/4 cup olive oil
finely chop basil leaves in a food processor. add crushed garlic and process into a paste. (these steps can combine into one using a mortar and pestle.) transfer to bowl and stir in lemon rind. add some of the lemon juice to taste. move back to food processor or blender and blend in oil, a little at a time, until it reaches consistency you want, and is well combined. Taste and adjust seasonings. Spoon over fritters and enjoy!

You can use this as a marinade for any meat including serving over a piece of grilled fish. It would also be great to spice up some pancakes or some good ole cornbread ho cakes.
Tomato Jam $8.00 18 oz Jar ~ Tomatoes, Dark Brown Sugar, Molasses, Fruit Pectin Mix, Lemon Juice, Citric Acid and Erthorbic Acid to promote color.
This sweet and savory Jam can be used like a pepper jelly. Serve it on a buttery cracker with some cream cheese and garnish with a slice of fresh hot pepper and basil leaf for some added spice. Use to enhance pasta sauce or as a marinade for meat.
We also have the newest batch of Fig Banana Preserves made special from the Chef at Alon's Bakery. We are offering this to our CSA customers for $8.00 for a 10 oz jar while supplies last.
Please email us with any special request. You can get extras of anything we include in your box so you can put them up for the winter. You can blanch the vegetables and freeze them. Look for an article to follow in this months' newsletter.
