Notes from Neil
In the last number of years I have seen some varying extremes in our weather starting with extreme drought followed by last years flood which destroyed a lot of our fall planting, the snow storm which destroyed three of our green houses and this past weekend of harsh rain. This gives me the knowledge of just how fragile our environment is and how that influences our health. This past weekend I drove down to my Dublin farm to pick cabbage and kohlrabi where the last thirty minutes before arriving brought on a hail storm like cats and dogs. When I arrived at the farm I saw that the leaves to the cabbage and kohlrabi where shredded. These are just a few of the challenges I deal with in farming but I keep on pursuing cultivating this great land despite the daily challenges to stay sustainable and financially sound. I appreciate your continuing support
of our CSA program and encourage you to come to the farm dinner on April 17th so you can see the farm in all its glory.
If you have experience in weed whacking we could use a little help in cleaning up our farm for the Spring Fling. We are also in need of volunteers to help with the preparing of our dinner. Please send us an email or better yet give me a call.

Homegrown Recipes
This weeks recipe was sent in by Debbie Newmark and shows her use for some of TaylOrganic Produce and Value Added Products
Baby Cabbage
Core and dice a tart apple (I used Fuji; could use Granny Smith, Braeburn, etc.) Core and chop two baby heads of cabbage
Saute apple in 2-3 TB of butter until soft (about 3 minutes). Add cabbage and cook until slightly wilted. Add 1/4 - 1/2 cup of Neil Taylor's famous pear blueberry juice and simmer over low heat until cabbage is wilted. Season with salt and enjoy.

Example of a CSA Full Share
This week I would also like to discuss our CSA program here at TaylOrganic Farms. If you notice we always have more than nine items listed that may be available in your box. The reason being is that there are many influences here at the farm that may affect what goes into our box. We may plan on one item and due to weather or condition of produce we may have to substitute some of the produce with other produce not listed or even use our Value Added Products from time to time. Our CSA boxes provide the following:
VEGETABLES: Full vegetable shares consist of 8-10 items, weighing an average total of 8-10 lbs. Half vegetable shares also consist of 8-10 items, but with a total poundage of 4-5 lbs averaged over the contractual period. There will always be one local fruit in the vegetable share at one pound for full and a half pound for half shares. If you noticed you have been given a full pound for the 1/2 share whereas you should be getting only 1/2 lb.
FRUITS: A full fruit share generally provides 2 pints or 2 lbs of fruit per week, while a half share offers 1 pint or 1 lb of fruit per week.
While we are here at the farm packing our CSA boxes weekly we are told to always go over in volume and consistently give our CSA customers more than what they pay for in their contract. I would also like to add that with Mr Neil's knowledge of farming he has perfected the perfect produce. It has a superior taste to anything you will find in the grocery store or Farmer's Market in the Organic section and I have personally challenged this myself and ended up paying more for the produce and getting an inferior product. He also encourages us to taste the produce often in it's raw stage and I have to say I am quite impressed. He says that we should minimally cook it so we can keep the nutrients and the natural sugars at their highest and not add too many seasons. I have to agree with him on this note. Bottom line is that Mr Neil is doing the hard part to getting you a great CSA box each week with most of the produce from his farm and with the added convenience of able to skip during weeks of your contract. There are not many CSA's around that can say that. So enjoy and "Go in good health and return in better" quote Mr Neil.
Use the recipe below to use some of your CSA produce you may receive in your box to keep it in it's natural state. Strawberry Poblano Salsa
Mild and crunchy poblano chiles (also sold as pasillas) paired with sweet strawberries and zesty spring onions make this salsa a real crowd-pleaser. Serve topped on fish or poultry, as a salad on spring lettuces, or as a snack with chips. The optional avocado gives it a creamy texture and heartier feel. Prep Time: 15 minutes Total Time: 15 minutes
Ingredients: ·1/2 tsp. cumin seeds ·2 Tbsp. lime juice ·1 Tbsp. olive oil ·1 clove garlic, minced ·1/4 tsp. salt ·1/4 tsp. freshly ground black pepper ·1/8 tsp. cayenne ·1 fresh poblano chile, chopped ·1 spring onion or 3 green onions, white part only, chopped ·1/4 cup cilantro leaves, chopped ·1 cup medium strawberries ·1 avocado, peeled, pitted, and chopped (optional) Preparation: 1.Sprinkle the cumin seeds into a small fry pan and toast over medium-hi heat until toasted and fragrant, 2 to 3 minutes. Set aside and let cool. 2.In a medium bowl, whisk together lime juice, olive oil, garlic, cayenne, salt, and pepper. Toss with poblano, onion, cilantro and cumin seeds. 3.Gently wash, hull, and cut strawberries into quarters. Just before serving, gently toss in strawberries and avocado, if you like. Makes 2 cups |
