THE BENEFITS OF FRUITS & VEGGIES

The Many Colors of Health

fruits and veggies

Fruits and vegetables come in terrific colors and flavors,
but their real beauty lies in what's inside. Fruits and vegetables
are great sources of many vitamins, minerals and other natural
substances that may help protect you from chronic diseases.

To get a healthy variety, think color. Eating fruits and
vegetables of different colors gives your body a wide range
of valuable nutrients, like fiber, folate, potassium, and vitamins
A and C. Some examples include green spinach, orange sweet
potatoes, black beans, yellow corn, purple plums, red watermelon,
and white onions. For more variety, try new fruits and
vegetables regularly.

RECIPE OF THE MONTH

Roasted Red Pepper Pesto Crostini

Roasted Red Pepper Pesto Crostini

Ingredients:
1 baguette, cut into 1/4-inch-thick slices
1/4 cup plus 2 tsp. extra-virgin olive oil
2 garlic cloves, peeled
2 red bell peppers, roasted, peeled, seeded and
  coarsely chopped
2 Tbs. slivered almonds, toasted
3 Tbs. grated Parmigiano-Reggiano cheese
1/4 cup finely chopped fresh flat-leaf parsley
1 tsp. fresh lemon juice
Pinch of cayenne pepper
Salt and freshly ground black pepper, to taste
4 oz. goat cheese

Directions:
Arrange the baguette slices on a baking sheet and brush
lightly on both sides with the 1/4 cup olive oil. While the crostini
are still warm, rub the top of each one with 1 of the garlic cloves.
Set aside.
In the bowl of a food processor, combine the red
peppers, the remaining garlic clove, the almonds, cheese,
3 Tbs. of the parsley, the lemon juice, the 2 tsp. olive oil and the
cayenne pepper. Pulse until a coarse puree forms.
Season with salt and black pepper.

Preheat an oven to 350°F.

Spread about 2 tsp. of the goat cheese on each crostini.
Bake until the cheese is slightly soft and the crostini are warm,
about 5 minutes. Transfer to a platter and top each with about
1 Tbs. of the red pepper pesto. Sprinkle with the remaining
1 Tbs. parsley. Makes 24 crostini.

RIDING TO HELP OTHERS: DISABLED SPORTS

Providing disabled children and
adults the opportunity to enjoy biking and
other sports on Mammoth Mountain and
throughout the Sierra.

bike kids

In support of their fundraising efforts, Tom has formed a small
team, Bay Area Easy Riders,  to ride over 130 Miles with a vertical
climb of 8000 feet in 3 days .

To do this, we need your help! The funds we raise for The
Sierra Cycle Challenge go directly toward supporting students
with individualized instruction and adaptive equipment, so
they can enjoy the same sports that you and I do. Your
donationswill allow an autistic student to take his or her first runs
down Mammoth Mountain or a Wounded Warrior from the
Iraq/Afghan war to remember that life is still worth living.

Our Goal: Raise $6,000.  Please help us reach the goal with
a tax-deductible donation to Disabled Sports Eastern Sierra.

A donation of any amount would be appreciated.
DSES accepts checks through the mail, and credit cards
online or over the phone:

JULY TESTIMONIAL

Shawn C: Los Altos, CA

NoXcuses gets everything right- the facility is spacious, the
ambiance is great (no meaty gym feel) and the space is
smartly split between a pilates/yoga side and a cardio/weight side.
It's very clean and the owners are wonderful!
The owner, Angie, is a friendly, down-to-earth mom of two
and a fantastic pilates/yoga trainer. I've been strength training
with Cameron for almost 5 years and he is the best- very smart,
incredibly knowledgable and committed to helping you reach your
goals. I started going to Cameron after having my second child,
he helped me get back into shape quickly. I've tried other gyms that
are closer to my house but have always come back to NoXcuses for Cameron and the environment/quality of the gym.
