Dandelion Salad with Goat Cheese & Tomato Dressing

Dandelion Salad

Cultivated dandelion greens are a bit milder than their wild cousins, but they still have some bite-easily tamed with bacon and cheese in this salad.

Makes 4 servings, 2 cups each

Ingredients:

Dressing
1/4 cup crumbled goat cheese
2 tablespoons white-wine vinegar
2 teaspoons maple syrup
1/4 cup extra-virgin olive oil
2 plum tomatoes, seeded and chopped
1/2 teaspoon salt
Freshly ground pepper, to taste
1 tablespoon chopped fresh tarragon
Salad
8 ounces orecchiette, or small pasta shells, preferably whole-wheat
2 slices bacon
1 tablespoon extra-virgin olive oil
1 medium red onion, thinly sliced
2 cups chopped dandelion greens, or arugula, any tough stems removed
2 cups baby spinach
1/4 cup grated Parmesan cheese

Preparation:

Combine goat cheese, vinegar and maple syrup in a  food processor and blend until combined. Add 1/4 cup oil and tomatoes and blend until smooth. Season with salt and pepper. Stir in tarragon.
To prepare salad: Bring a large saucepan of water to a boil. Add pasta and cook according to package directions. Drain, rinse with cold water and set aside.
Cook bacon in a large skillet over medium heat until crisp, about 4 minutes. Drain on a paper towel. Crumble when cool. Wipe out the pan. Add 1 tablespoon oil and onion and cook, stirring, over medium heat until soft, about 5 minutes. Let cool.
When the bacon and onion are cool, toss them in a large bowl with dandelion greens (or arugula), spinach, Parmesan and 1/2 cup dressing. Drizzle more dressing over each serving, if desired. (Cover and refrigerate the remaining 1/2 cup dressing for up to 3 days.)

(the only part of the plant that should be eaten) are very tart but when sweetened, give rich flavor and texture to sauces and pies. Rhubarb can also be blanched, diced, and added to salsas and salads.

Natural Weight Loss Tips

natural weight loss

It is estimated that over 60% of American adults are overweight, with a statistic like that, diets and weight loss programs have become popular in recent years. The conundrum is to lose that weight while staying healthy and NOT using drugs and gimmicks that may be more harmful in the long run. So, here are some tips to help lose the extra weight the natural way.

Make Meals Last Longer
Eat slower and chew your food better. Its a fact that it takes the body almost a half hour to signal the brain that you are full.

Water, Water, And More Water
Water stimulates your metabolic rate, which helps the body process stored fat. A large glass of cold water just prior to a meal helps shrink your stomach, hence you feel full quicker.

Hot Spicy Foods Can Help
Scientific studies have proven that hot, spicy foods  can increase metabolism by as much as 40%.

High Fiber Foods
Fiber helps digestion and you will  feel fuller faster and remain full longer.

Stay Positive
Keep a positive outlook and your self esteem will follow suit. The better you feel about where you are going, the more likely you are to get there and realize your weight loss goals.

Flavor And Taste
Unfortunately, fat and carbs account for most of the taste of many foods. This is easy to counter, though, with spices and strong flavorings like vinegar, chili powder and tarragon. Using these spices makes your food more exciting.

Exercise And Then Exercise Some More!!
Get out and walk or just do some household chores. Start a garden and keep it up. All you need to do is get your body moving. In order to lose weight, your body has to burn more calories than it takes in. So exercise is vital to maintaining a healthy lifestyle.
