Recipe of the Week
Courtesy of: Rolled Roasted Red Peppers from The Essential Vegetarian Cookbook by Diana Shaw 1/4 c. minced fresh parsley 1 c. ricotta cheese 1/2 c. crumbled feta cheese 1/4 c. minced oil-cured black olives 2 large red peppers, roasted and peeled To roast the peppers, heat the broiler in your oven. Slice the peppers in half lengthwise and pull out the core, seeds, and stem. Place the pepper halves skin side up on a broiler pan. Broil until the skin buckles and chars, about 5-8 minutes. Cool by transferring to a paper bag and refrigerating for about 25 minutes or freezing for 7-10 minutes. Peel after they are cool enough to handle. Heat the oven to 350F. Combine the parsley, cheeses and olives in a mixing bowl. Cut the peppers in half lengthwise again so that you have 8 strips. Spread an equal amount of the cheese mixture of each pepper, leaving a 1/2 inch margin at the bottom and top. Roll up each pepper and place it on a baking sheet. Bake for 20 minutes, until the filling is golden brown.
