Galveston Historical Foundation (GHF) will present the 16th annual Sacred Places tour from 10 a.m. to 4 p.m. on Saturday, February 25, 2012. Galveston features churches that date back to the 1840's and includes many churches with historical significance. Advance tickets for the tour are $10 and available online at www.galvestonhistory.org. Super Bowl Recipe - Shredded Pork Tacos
Nathan Gresham of Beausoleil in Baton Rouge, who is one of our favorite chefs, shared a great footballing recipe with us, and with the big game coming up, we thought we'd share with you. Hope you enjoy it!
2 lb. pork butt-cubed
l large onion-diced
3 jalapenos-diced
1/2 tbl. crushed red pepper
1 tbl. chopped garlic
l lemon cut in half
1 tbl. creole seasoning
1/4 c. redwine vinegar
1 tbl. cumin
salt and pepper to taste
6 cups chicken broth
oil-enough to cover bottom of pot
9 inch flour tortillas
Season the pork well with salt and pepper. Heat up the oil and brown off pork on all sides. Add rest of ingredients to the pot except vinegar and broth. Cook until the onion is tender and deglaze with vinegar. Add the chicken broth and bring up to a simmer. Let simmer until most of the liquid has cooked out. At this point the pork should shred easily with the help from a fork.
To enjoy, place the pork on 9 in. tortilla, top off with a fresh avocado slice, squeeze of lime and Crystal hot sauce.
