EScapes continues our coastal coverage with some new recipes that will warm you up this winter season.  Mahi Mahi with Rum is right on target for any festive Friday evening. We also tell you how to jazz up your winter squash - Texas style!  Need a quick mental trip to the Islands?  Try one of Tommy Bahama's Pineapple Sours.  We include the drink recipe and a little information about Pisco.

 

Calling everybody looking for a reason to drink wine!  France's Beaujolais Nouveau will make its debut on November 17, 2011.   We tell you about the history of this wonderfully playful wine and give you a sneak peak at this year's new label.

 

Congratulations to Jerry Diaz for receiving a lifetime achievement award during Meeting Of The Minds (MOTM), the national Parrothead convention. Jerry set up the first MOTM in New Orleans 20 years ago - it would turn into an annual gathering in Key West that sells out at 3,000 people! It is an eagerly anticipated celebration of the harvest, and in the United States a sign of the holiday season and delicious feasts to follow. France's Beaujolais Nouveau will make its debut on November 17, 2011. French law dictates that this vivacious, fruity red wine be released at 12:01 a.m. on the third Thursday in November, a decades old tradition that has resulted in festive Beaujolais Nouveau celebrations around the world heralding the wine's arrival with costume parties, special deliveries, music, and dancing.

 

To produce his annual artsy label for the Nouveau, French wine producer Georges Duboeuf has collaborated with renowned Brooklyn artist Michael McLeer, a.k.a. Kaves. Kaves created Nouveau Expression, a unique, graffiti-inspired urban celebration scene for the 2011 label that toasts more ...

Mahi Mahi with Rum - Festive Fish for a Fabulous Friday!

2 medium Mahi-Mahi fillets  Gulfscapes Magazine Cover

1/2 cup fresh lime juice

1 lemon, sliced thin

2 Tbsp. fresh oregano

2 onions sliced into thick rings

4 Tbsp. butter

1/2 cup dark rum

1Tsp. sea salt

2 Tsp. coarse ground black pepper

A little heat, a little sweet and a touch of bacon - transform simple winter squash into a tasty treat.

Ingredients  
2 Acorn Squash, washed and cut into halves 
4 Tbsp. melted butter
1/4 cup Texas Pete® Chipotle Hot Sauce 
4 Tbsp. brown sugar 
1/4 cup honey 
.25 lb. bacon, thick cut, sliced into lardons, cooked until crispy 
1/4 bunch scallions, bias cut 
1 leek, julienne, baked in 200° oven for 12-14 minutes
Salt & Pepper to taste

Heat oven to 325°.  Season squash with salt and pepper. Place squash flesh side down on lightly oiled baking sheet tray. Roast for 25-30 minutes. Remove squash from oven and invert. Combine butter, Texas Pete Chipotle Hot Sauce, brown sugar, and honey - drizzle atop squash. Roast for an additional 18 to 20 minutes. To serve: Cut squash into quarters and generously garnish with bacon lardons, chopped scallions & crispy baked leeks. Recipe by Chef Tim Grandinetti.

2 parts Pisco (Pisco is a South American brandy produced mainly in Chile and Peru)

3/4 part Orange Curacao

1 part Pineapple Juice

1 part Sour Mix

1/2 part simple syrup

4 pineapple cubes

  

Mix all ingredients together with ice and serve in a tall glass.

A major exhibition celebrating the life and work of noted Louisiana artist and jewelry designer Mignon Faget opens Friday, Nov. 18 at the Capitol Park Welcome Center in Baton Rouge, LA. The exhibit will feature hundreds of objects including jewelry, prints, linoleum blocks, drawings, glassware and textiles and will encompass Faget's commercial work and commissioned pieces for Mardi Gras krewes, museums and numerous charitable organizations.  More about Migon Faget

Tampa's Downtown on Ice

November 11, 2011-January 1, 2012

Tampa's only outdoor ice skating rink opens Friday, November 11 at 10 a.m.  It's a new holiday tradition. Grab the family and head to downtown Tampa to enjoy the holidays. Admission is only $10 per person for a 90 minute skate. Fee includes skates. The rink is open daily from Nov. 11 - Jan. 1, 2012.
