This is a perfect summer recipe courtesy of my friend Christa Orecchio from The Whole Journey. It's fairly simple and I usually serve it with some chicken on the side, yum!
- 1 bunch kale, washed and de-stemmed
- olive oil
- 1 container organic raspberries
- ¼ cup pine nuts
- ½ cup raw goat cheese
Take some of the olive oil and the 2TBS of sea salt and mix them together in a small bowl. Use that mixture to massage the leaves of the kale. This will soften it so that it tastes much better.
Take the stem off the kale, roll the leaf, then chop it into ribbons. Add a container of organic raspberries, add the pine nuts, add ½ cup of raw goat feta.
Dressing - ¾ to 1 cup apple cider vinegar, ½ cup Barlean's flax oil or extra virgin olive oil, 1 clove garlic, pinch sea salt, optional - 3 drops stevia or bit of maple syrup, dried oregano and basil - shake all ingredients, pour over the salad.
