 My Promise

Proteins are always either organic, wild or clean farm  raised.  Our eggs are local, organic and free range from Homestead.

Produce is always organic if it's on the dirty dozen list. Much of the produce is 
   locally grown and organic  I work in cooperation with local farmers 
   markets including Marando Farm  to bring you the freshest produce available. 
Dairy is either local organic or imported and free of hormones. 
Only high quality oils are served, such as grape seed oil and imported olive oils.

Honest food, cooked not processed.

Order Deadline Wednesday January 19th by 12 noon.

 Pick-up Sundays 3pm till 6pm or Monday 7am to 4pm

Big Gal New Years

Yes, this was me New Years Eve 05.  Hi Beth Gross, my client that night and friend today. 

Notice the compression glove on my left hand, it's important later. There will be a test, lol.

To get from there, to here, I needed many things, including a meal plan.  The Wholesome Meal menu is my perfect fridge. : - ) 
  • Salad dressings that are on track with my plan, 2 grams of fat.
  • Veggie-carb sides to keep me sane and able to eat the most amount of vegetables I have ever eaten in my whole life.
  • Protein Snacks to boost my protein intake or ensure I am eating my planned amount.
  • Veggie Snack packs, under 50 calories. 
  • Drizzles to flavor up my dish of steamed broccoli, wilted spinach or protein
  • Protein Salads, ready to shove into my mouth and mayo free.

Each week the menu will change a bit  to take advantage of fresh florida crops that look great that week.

Order on Wednesday, pick up on Sunday and Monday.
 
Why Wednesday?  That's the day I place my order with the farmers markets.  On Thursday they

 drive the state, picking up the freshest produce from Florida's farmers.

Pick up from Josef's Sundays starting at 3pm - 6pm and on Mondays 7am - 3pm.  Delivery is available, fees vary.

My blog is titled "Confessions of an Orthorexic Catering Chef".  Yes boys and girls, being dedicated to eating healthy food is now officially a medical "disease".  So I embrace my affliction by sharing the many reasons why I say "Eat Real Food" and spotting the faux food out there behind the scenes.

fat pix bigger file Remember that compression glove in my picture above?  Well I got injured, a 3rd degree burn on my hand.  Four days in the hospital and a skin graph later, I found myself barely able to function.  I was so heavy and now compromised,  I couldn't even get up off the couch, let alone the floor with out assistance.
   Part of my recovery plan was physical therapy three times a week; in October, November & December.  Yikes!  When my therapist said in a most rigid voice "Your best shot at recovering is in the first 12 weeks.  Do you want to use your hand ever again?" I freaked.  Since the answer was yes, I made the time, did the work and watched my hand renew and heal.  Very cool. So if I could do that for my hand, I could do that for the rest me.  I took those same time slots and scheduled  sessions with Emery Behavioral Medicine for nutrition counceling and my work outs.  The team there was amazing to me.  I was encouraged and respected, enabling me to leave my embrassment at the door.    Then one day I went to this hard core gym BB3 and my life really changed. 
  I admit it.  I'm a bit of a nut when it comes to the quality of the food I put into my body.  But you see I know a secret that helped saved my hand. Food, real food, from the ground and everything food, is where the nutrients or building materials to renew our bodies come from.  My doctor told me skin needs vitamins A, C, E & zinc.  I ate avocado, turkey and spinach at least twice a day thoughout my recovery..  

 For over 16 years I have cooked for literally 100's of clients one by one, all achieving  body rejuvination and healing.  I have learned a lot about how food can impact your health for the better.
