What you must serve this season. "Something beef, something chicken, something seafood and something vegan."
This year guests are asking for their veggies. For crowd pleasing menus, don't skip the veggie platters and add an extra veggie side to every menu. I have added "Veggie-o-roma", Sushi Gone "Wild", Gnocchi Stations & Martini's and Organic Turkey in my NEW 2010 Holiday Catering menu. Check out my new menus at www.chefelisascatering.com I have totally kick-up my Italian game with offering Gnocchi Stations and Gnocchi Martini's with a choice of shrimp newburg sauce, beef portabella marsala, sherry chicken with dill, mama's marinara, grandma's meatball sauce, alfredo and pink sauce. Also Sushi gone Wild, wild salmon, halbut and all other seaonal seafoods to enjoy. This station comes with every sauce, three different styles of wraps, inside out roll and anything else you can imagine. I added Polynesian Fare yum yum , for more fresh fish items. Poke Poke (ahi) and Lomi Lomi (massaged wild salmon) are the polynesian ways of sushi. They are great fun to say and to eat eat . I'm serving from bamboo spoons too. And my NEW Chicken skewer, chicken hui hui. Pineapple chicken . Chai Tea Poached Wild Salmon on cucumber or wonton is really creamy and yummy. I served it over wonton and mixed greens at the Anne Stork Fund Raiser this year, in the picture above. And new for desserts, Pie in a shot glass with a pastry twist. Yes it's true, lemon merengue, strawberry rubarb, old fashioned apple pie and any other flavors we can create together. |

How about them apples
As I walked into the Greenwise Publix I was accosted by this sign. I was so shocked and offended by this ad champagne that I of course needed to give the poor pharmacist just sitting there a piece of my mind. He wasn't selling any flu shots so maybe I'm not only one this ad didn't work on. My $25.00 remains safely tucked away in my wallet.
However wouldn't it be great if advertisers actually told the truth? Google, apples and nutrition and you'll find a plethera of studies backing up that old adage, an apple a day keeps the doctor away. A Cornell University study showed that an apple a day, or more, can help keep breast cancer away. Other studies have found that so-called phytochemicals in apples are associated with a reduced risk of lung cancer, heart disease, high cholesterol and diabetes. I always buy organic apples. Conventional apples can be exposed to 50 different pesticides during their growth cycle from bloom to fruit. The residual load of pesticides in the fruit is pretty high and get's them ranked on the "dirty dozen list".
What is GMO and why you want to know
October brought some very interesting news for GMO (genetically modified or engineered) foods. This is the link to the first comprehensive list of GMO foods I have ever seen. http://www.responsibletechnology.org click on shopping list. page 13 blew my mind. I had no idea baking soda and sugar were likely GMO. But then again how could I when GMO labeling is not required in this country. Remember the trans fat battle of 2003? It took ten years to win that battle and require trans fats be labeled. And then the law gave food manufactures 3 years to clean up their act before they had to admit their deadly sins.
