The Truth About MSG in your Food

In my journeys for seeking out the highest quality ingredients to feed my clients, I also come across the worst. This how I see MSG- right in the bulk spice isle of my local wholesale food outlet. And they sell a bunch too, this display was 5 jugs wide. Now lets move into the restaurant kitchens. Who is putting this into your food? How much is that person getting paid an hour? Can they follow a recipe? The bottom line is, MSG is chemical that restaurants can freely sprinkle over the food like Pixie dust.
Now, when I tested for my Food Manager State Certification, I was taught that MSG was considered a chemical contamination in food. My manual states, " When these substances are used in the food preparation, the establishment must post a public advisory such as "Some foods may contain sulfites or MSG; ask your server for details". I have yet to see a sign like that in any restaurant where I know there is MSG in the food.
MSG is a sneaky trick, it's a chemical excito-toxin, meaning it effects our neurological system, our brains. Food doesn't actually taste better with MSG, our tongues are stimulated so our brains "think" it tastes better". It also works as an appetite stimulant, so you eat more, because it tastes so good, and then you eat more because it tastes so good... well you get the idea- more food, more money, more calories for you.
The common school of thought is, in moderate amounts, MSG won't cause harm. But how much are you taking in? The amounts in the food supply have quadrupled since the 1960's.
The FDA doesn't require MSG to appear on food labels, even though over the past half-century, research has suggested the flavor enhancer could add to health risks ranging from blindness to migraines, nausea, joint pain, sleep disorders, heart irregularities and more.
Spotting MSG
- If it tastes too good to true, it has MSG.
- If you bought it pre packaged from anywhere but whole foods, it has MSG
- if it came from a drive through...it has MSG
- if the label says, calcium caseinate, dry milk powder, hydrolyzed soy protein, and yeast nutrient, hydrolyzed vegetable proteins, autolyzed yeast, hydrolyzed yeast, yeast extract, soy extracts, and protein isolate, just to name a few...It has MSG. The FDA allows MSG to re-name it'self :)
Chef E's Tip: If you find MSG in your favorite spice blends, start cutting your exposure in 1/2 by adding equal parts of sea salt to your seasoning blend. You'll find a little goes a long way.

- Learn how to saute no oil, no teflon.
- Portion Control: learn how to create meals for your calorie needs.
- Chicken breasts 101, roasting, sautéing and grilling. Learn techniques, to create endless creations. We will be playing with sun-dried tomatoes, fresh basil, Lemon zest, lime zest and juices, fresh cilantro, tomatoes, cumin, fresh ginger, and shaved parmesan cheese, fresh and dried rosemary and many more.
- The perfect juicy turkey burger, we'll make 3 flavor profiles, but we'll brain storm new combinations too!
- Toasted butternut squash, roasted butternut squash
- Beets 101 (The Superfood), served cold, served hot & roasted, raw and shredded and drizzled with five different flavors for you to sample. They really can be delicious and I'll show you how.
- Breakfast: The Egg Frittata made with no oil.
- Fresh Fruit Bowl
- Salad Dressings and Sauces: We'll make several varieties for you to sample and learn

Food for Fitness 101 was so much fun, here comes Food for Fitness 102
- Spices and Seeds, their health benefits and flavor benefits, how to roast and build flavors. Did you know cinnamon helps level blood suger and caraway seeds help with circulation which is great for everything else.
- Great Carbs: Quinoa, The perfectly roasted sweet portato and 3 things to do them! We are going to brain strom more too!!
