Featured Recipes - Local Marinades
In keeping with the BBQ theme of the last issue of The Market Message, we are pleased to feature four delicious marinade recipes.

 

These marinade recipes, courtesy of Eat Local Caledon, can all be created with products available from our Market Vendors and they can all be prepared using the same two simple steps:
  1. Combine the ingredients in a medium-sized bowl.
  2. Mix together well (using a hand blender if desired) and use to marinate your favorite meat.
These marinades take only a few minutes to prepare and will make a world of difference to your favourite BBQ meals.

Grilled Honey Dijon ChickenHoney Dijon Marinade
Ingredients:
  • 1/2 cup honey
  • 1/2 cup Dijon mustard
  • 2 tbsp sunflower oil
  • 4 cloves of garlic, minced
  • 1/2 tsp Kosher salt

 

Grilled Maple Garlic Pork TenderloinMaple Garlic Marinade
Ingredients:
  • 2 tsp Dijon mustard
  • 1 tsp sesame oil
  • 3 cloves of garlic, minced
  • 1 cup maple syrup
  • freshly ground black pepper to taste

 

Maple Balsamic Marinade
Ingredients:
  • 1/3 cup balsamic vinegar
  • Grilled Maple Balsamic Pork Chops1/4 cup maple syrup
  • 1 tbsp fresh rosemary, minced
  • 2 tsp Dijon mustard
  • 1/2 tsp Kosher salt
  • 1/2 tsp freshly ground black pepper
  • 2 cloves of garlic, minced
  • 2.5 tbsp extra-virgin olive oil

 

Lemon Herb Marinade

Ingredients:
  • Grilled Lemon Herb Chicken Kabob1/2 cup vegetable oil or olive oil
  • 2 tbsp red wine vinegar
  • juice and grated rind of two lemons
  • 1 tbsp fresh basil
  • 1 shallot OR 1 large onion, minced
  • 1/4 tbsp oregano
  • 1 tbsp soya sauce
  • 6 cloves of garlic, crushed
  • 1/2 tbsp black pepper


TIP: To get the most out of these recipes, the meat should be marinated (while covered or wrapped) and placed in a refrigerator for at least a few hours prior to grilling ~ with 24 hours being optimal.
