Vendors at the Caledon Farmers' Market

Whether it is food or crafts, at the Caledon Farmers' Market we are fortunate to have vendors selling the highest quality products. In each newsletter we'll feature three of our vendors.

LBLU Apparel
LBLUSimran Jassal is a local designer trained in textile technology and fashion design. LBLU Apparel, the label under which she designs her clothing line, is the outcome of her two passions, design and caring for the environment.

Simran states, "As a mother of a young daughter it was only natural for me to start with clothing for young girls.  All the clothing I design is hand-printed using an eco-friendly process and I am moving towards all organic clothing."  Due to popular demand they will soon be adding a ladies line as well.

LBLU believes in supporting local community and those in need. In keeping with their guiding vision, they give 10% of our sales to Kidz in Camp - organized by Caledon Community Services.  Simran adds, "LBLU's mission to be a socially responsible company means that the clothing is developed both overseas and locally."

Leitch's Honey Logo"It's addictive.  Looking after bees is something that gets into your blood" says Randy Leitch, proprietor of Leitch's Honey.

His own love affair began at a 4-H Club 35 years ago, and today he manages some 250 hives throughout Caledon and Dufferin. Each hive has a possible yield of 100-150 pounds of honey, so yes, he is a "buzzy" bee-keeper!

Did you know that there are more than 300 flavours and shades of honey? That's right. Flower nectar, the sweet liquid gathered by bees, determines the honey's flavour and colour. In general the darker the honey, the more bold the taste.

Passionate about the health benefits of hive products, Randy advises that "a spoonful of honey before bed helps ensure sleep and nourishes the brain."

Mark and Bridgitte have a combined 23 years of research, education and personal experience into looking young and feeling good.

Mark is a registered holistic nutritionist with two young vegan (and mostly raw food eating) children. Bridgitte is a master of transition with four kids, and proudly states "My girls are 100%  vegetarians.... and everyone drinks their daily sprout green juice and superfood smoothies and other vegan concoctions we create."  Mark has been growing sprouts and eating lots of them since 2004, Bridgitte since 2007.  "We began growing and selling sprouts and making chocolate together in 2009."

Featured Recipe - Kale Chips
Kale contains so many health-promoting properties that it can be considered a "superfood".

It is a highly nutritious with powerful antioxidant properties, and is very high in beta carotene, vitamin K, vitamin C, lutein, zeaxanthin. Kale is also rich in calcium.

This leafy green (or purplish) vegetable is a popular ingredient in salads and soups, but did you know that Kale Chips also make a delicious and nutritious snack?

By following this simple recipe below (courtesy of the Caledon Countryside Alliance) you can discover how something so good for you can also be incredibly pleasing to your palate.

Kale Chips

Kale ChipsPreparation Time: 15 Minutes

Cooking Time: approximately 45 minutes

Ingredients:
  1. 1 bunch of kale
  2. 2 Tbs olive oil
  3. 1/2 lemon, juiced
  4. 1 tsp salt
Preparation:
  1. Preheat oven to 200°F.
  2. Wash kale thoroughly and let dry.
  3. Tear kale away from stem. Each kale leaf should be torn into about 6 or eight pieces.
  4. Place kale, salt, olive oil and lemon juice into a bowl and mix together with your hands, gently massaging the kale with the oil, lemon and salt.
  5. Lay kale out on a cookie sheet or pizza pan.
  6. Place in oven and set timer for 30 minutes. At 30 minutes, remove from oven and gently unstick kale from pan (if it has stuck) and return to oven for another 10-15 minutes until kale is dry and crispy.
  7. Allow to cool and enjoy!
NOTE: These chips can be stored in the fridge for up to a week.

One of the great things about this basic recipe is that, while it is great on its own, you can experiment by adding cheese, curry, seasoning salt or other spices to find your favourite flavour profile. And, if you are feeling like something a little more decadent, you can also enhance the experience by enjoying them with salsa, sour cream and your favourite chip dips.
